Seasme Seeds Jaggery Steamed Dumplings (koLukkattai)


Seasme seeds  jaggery  steamed dumplings  (koLukkattai)
I learnt this recipe from my Gran ma.
Makes 15 Dumplings

Roasted Red Rice Flour – 200gram
Jaggery – 150 gram
White sesame seeds – 1tbsn
Moong dhal – 1 tbspn
Cardamom powder – ½ tspn
Grated coconut – 3/4 cup


Method

Powder the jaggery.
 Add half  cup water and boil  it.  strain it.
Roast the moong dhal and soak for 10 min.
In a bowl put all the ingredients and knead well to a  soft dough.
Divide as equal portion of balls and make into elongated  shapes.
Steam them  on idly pan (or any other thick bottomed pan)  for about 15 minutes.

Ramadan Noobu Kanji - Mutton Kheema Soup





Ramadan Noonbu Kanji – Ramadan Mutton kheema Soup


This porridge (kanji) is prepared everyday during the Ramadan season. 
 In the Islamic Tradition, during Ramadan's 30 days,  we  prepare many variety of kanji.. There are varieties of rice soup like (coconut milk rice soup, veg rice soup, oats veg chicken soup,mutton keema rice soup, chicken kheema rice soup,biriyani noobu kanji , tomato soup, cream of chicken soup,palak soup, etc....) among which one of them
 It is eaten with urad dal vadai, masala vadai, pakoda, bhajji, cutlet  or any other fried and crispy snacks. 


Broken (uncooked) Basmathi rice – 175 gram or ¾ glass
Moong Dhal – 25 gram
Methi (fenugreek)  seed – 2 tspn


Oil + ghee (or) dalda – 2 tbspn

Cinnamon – 1 inch size
Cardamom  - 1 
Clove – 2  
Onion – 1 big
Ginger garlic paste – 1 tbspn
coriander leaves& mint leaves – few
Tomato – 1 big
Mutton kheena – 100 gram
Grated carrot – 3 tbspn

Red chilli powder -  ½ tspn
Turmeric powder -  ¼ tspn
Salt – to taste

Green chilli – 1
Curd – 1 tbspn
Coconut milk powder -  tspn
Water – 8 glasses






Method

Wash and Soak rice, dhal, methi seeds for 20 minutes
Chop the onion and tomato
Wash the mutton kheema and drain it.
 In a vessel,  heat oil and temper the cinnamon, clove, cardamom. 
Add chopped onions and carrot.  stir for 2 min and close the lid and keep the flame low, leave for 5 min.
Add ginger garlic paste.   stir well and  keep in low flame. After the raw smell goes, add chopped coriander leaves and mint leaves and stir it for 1 min.

Add tomato and green chili,. then add red chili powder, turmeric powder, salt and curd.  stir well.
Cook on low flame for 10 min.
Mash the  masala and tomato well and keep on low flame.   cook for about 15 min.
Add water and let it boil. 






Add soaked broken rice and dhal.    Let it boil for 5 min.  close the cooker lid and keep the flame low. Leave for  2 whistles.  Let is cool. 
When pressure is  released,  Add coconut milk and mix well and boil for 5 minutes.





Ramadan Special Noonbu kanji – (Ramadan Rice Soup) is ready to serve with pakoda,bajji, or vadai.

Mutton Kheema Kabab /Ifthar Snacks



                                                 MUTTON KHEEMA KABAB





INGREDIENTS:


   Mutton kheema  (washed)- 1/4 kg
   Ginger and garlic paste - 1 tspn
   Garam masala powder - 1/2 tspn
   Red chilli powder 11/2 tspn
   Chilli powder - 1/4 tspn
   Turmeric powder - 1/4 tspn
   Salt to taste
   Onion - 2 big
   Oilve oil - 2 tspn
   Coriander leaves - 1/2  cup (chopped)
   Roasted dhall  powder - 1/4 cup
   Egg -1




   METHOD:
Squeeze the water from mutton kheema  add chilli powder, salt, turmeric powder, garam masala powder, , coriander leaves, green chilly, 
chopped onion grind coarsely  and   add beatened egg, roasted gram dhall powder to it and mix well. mix well and marinate for 1 hour.
 Now make desired shape kababs.
 Heat oil shallow fry the kababs in a tawa.
Alternatively, you can roast on a grill Or barbeque
 Kababs will be delicious to have with rice, roti ,non ,tandoori roti, parata, chapathies or     with kuboos or you can make it like sandwich.

Dates Chutney


 Dates has iron and other nutrients, which give lot of energy to the body. Raisins help to cure the cold symptoms. 



Ingredients

Dates – 8 
Black raisins – 15 
Tamarind paste – 1 tspn
Salt – 1 pinch
Jaggery – 1 inch piece
Chilli powder – ½ tspn
 Roasted Cumin powder - 1 tspn

Method

Remove the seeds from dates.
In a bowl,  add dates, raisins and  ¼ cup water . 
Cook  for 2 minutes in a microwave oven.
Let it cool.
Add rest of the ingredients and grind in a mixie/blender to a  fine paste.
Dates chutney is ready to serve. 

Note:   Dates Chutney goes very well  with samosa, bajji and  vadais.  
Kids will like the sweet chutney. You can use this as a jam to spread it on a bread slice to give it as a snack to the kids.   Dates has iron and other nutrients, which give lot of energy to the body. Raisins help to cure the cold symptoms.
