Dum (onion) & Cauliflower & Dum Cauliflower Kathi Roll






Dum  (onion) & Cauliflower

Serves :3
Preparation time 7 minutes
Cooking time : 10 minitues
Dum Cauliflower Side dish for chappathi


Ingredients

Cauliflower florets – ½ kg
Chopped Onion – ¼ kg
Oil – 2 tbspn
Ginger garlic paste– 1 tspn
Red chilli powder – 1 tspn
Coriander pwd – ½ tspn
Turmeric pwd – ¼ tspn
Salt – ¾ tspn
Garam masala pwd – ¼ tspn


Method
Cut the cauliflower and wash them with hot  water with salt.Heat oil in a wide pan add ginger garlic paste and sauté for 2 minutes then add chopped onion and sauté till they turn pink. Now add cauliflower sauté for 2min and close the lid and (leave dum) cook on low flame. Add all masalas except garam masala and cook on low flame for about 5 minutes. Finally sprinkle garam masala and mix well and serve with paratha or roti
Prepare chappati and place the dum cauliflower roll it and serve.

Malpua - SFC - 2




 Malpua


Deep fried pancake soaked in sugar syrup
I am the part of SfC (Sweet Fantasy Club) Started by Simply Tadka Preeti.

Prep: 3 hours

Cooking time : 30mins

Ingredients:
½ litre milk
1 tbspb – maida
150 gram sugar
Pinch saffron, mixed with 1 tsp hot milk
Ghee or butter for frying
Saffron,chopped nuts, to garnish
Method
Boil milk in a heavy bottomed pan until it reduce and has a creamy consistency. Leave to cool.
Once milk has cooled, whisk in maida and 1tbsn sugar until sugar dissolves and batter is of a pouring consistency. Add a litter more milk if required. Leave to rest at room temperature for 3 hours

Meanwhile boil remaining sugar with water to make sugar syrup and keep warm.
To prepare Malpuas, heat  ghee in a wide, flat bottomed pan. Pour a table spoon of batter over ghee and let it spread to form a small pancake. Fry over medium heat until golden brown, then turn over to fry other side. Remove process. Remove and dip in sugar syrup.
Arrange  Malpuas on a platter and garnish with saffron and chopped nuts. Serve warm or at room temperature.

Karuppatti Aappam/ Palm Sugar Aappam - SNC Celebration









 Divya Pramill, You too can cook,  South Vs North has successfully completed one year. Congratulations to all SNC Friends.
For This Celebration I am posting Shama’s  Karuppatti Aappam (Palm Sugar Aappam), Thank you shama for this Traditional Recipe.

Ingredients

Boiled rice - 1 cup
Raw rice - 1 cup
Urat dal - 1  handful
Karuppatti - 250 gms



Method

1) Make thick palm jaggery syrup .
2) Filter it and remove the impurities with a strainer once cooled.

3) Soak rice and dal for only 2 hours and grind it to a very smooth batter.No fermentation needed.
4) Finally , mix palm jaggery syrup with the batter without any lumps.
5) Heat aappam tawa or any non-stick kadai . Pour a small ladle of batter in the centre and then hold its handle with both the hands and rotate the kadai , hence the ladle will spread like a dosa. 




6) Spread a spoon of oil over it.
7) Cover with a lid . Cook in slow flame till done .


8) The centre part will be of and edges crispy .Just roll over and serve hot .

BottleGourd & Fenugreek Pakoda

Ingredients

  1. Fresh Meethi Leaves - 1 punch small
  2. Grated Bottle gourd – ½ cup
  3. Besan (kadalai maavu) – 150gram
  4. Rice flour – 50 gram
  5. Grated ginger – 1 tbspn
  6. Sugar – ½ tspn
  7. Salt – to taste
  8. Chopped green chilli – 1 no
  9. chopped onion - 1 (medium sized one)
  10. Bicarbonate of soda – 1 pinch
  11. Asafoetida (hing powder)  - 1 pinch
  12. salt - 3/4 tspn
  13. Oil – for frying
