Peswari Mutton kadai





Peshawar Mutton kadai is popular in Pakistani restaurant and Karachi restaurant.

Ingredients
Mutton with Bones - ½ kg
Tomato – 400 gram
Green chilli – 2
Curd – 1 tbspn
Ginger garlic paste – 3 tspn


To grind


Whole coriander seeds – 1 tbspn
Whole pepper corn- 1 tpn
Oil  - 2 tspn

For Garnishing

Juliennes ginger
Coriander leaves


Dry roast and grind under to grind ingredients
Wash the mutton strain the water.

Method
Heat cooker and pour the oil ,add ginger garlic paste and saute 2 minutes and add mutton pieces and toss well.
Add chopped tomatoes and stir well and allow to cook about 5 minutes.
Add chopped green chilli, salt, curd stir well and close the cooker lid leave 5 whistle.
After pressure release, in another pan add little butter + oil and pour the cooked mutton.
 Add ground spice powder and stir well allow cook until water absorb.
Garnishing with coriander leaves and julienne ginger.
Mouth water delicious Peshawar mutton kadai is ready to serve with chappati, parrata, naan.

Mutton Aloo salna/ Aloo Gosht Kurma/lamb potato Salna ( cooker method)

Ingredients

Mutton - 400 gram

Tomato – 2 thinly sliced

Onion – 2 chopped

Ginger garlic paste - 1 1/2 tbspn

coriander powder - 1 tspn

Red Chilli powder - 1 1/2 tspm

Turmeric powder - 1/4 tspn

salt - 2 tspn ( to taste)

Curd – 100ml

Oil - 5 tspn

cinnamon - 1 inch size 1 no

clove - 2 nos

cardamom - 2nos

potato - 2 nos medium ( each potato cut into 4 pcs)

coconut - 1/4 cup

cashew nuts  5 nos

Method

wash mutton and drain the water completely.

In a  bowl add curd, coriander powder,red chilli powder, salt, ,turmeric powder, green chilli, coriander leaves, mint leaves and mix well and add mutton pieces and marinate well.

In a pressure cooker ,heat oil add  cinamon, cardamom, clove when it splutter add sliced onion  and cook for 5 minutes.Allow to Brown in colour.

Then add ginger garlic paste and  stir  it well.  Keep in low flame. After the raw smell goes away, add chopped coriander leaves and mint leaves and stir it for 1 min.

Now add chopped tomato  and cook well

add marinated mutton mix to  it , and allow to cook in low flame for  5 minutes . Now add potatoes  mix it well and close the cooker lid  and leave  for 5 whistles.

In a mixer  add coconut and cashew nuts grind to  a smooth paste.

now after pressure releases  transfer mutton potato salna into a wide pan.Add ground coconut cashew paste  and required amount of water and  boil it for  5 to 10 minutes.

Mutton potato salna is ready to serve with bahara khana ,dalcha mutton fry or chicken fry and pappad ,pickle.

Bakrid Special Goat Leg Biriyani






 Mutton raan is whole leg ,cooking large pieces , we can prepare gravy or biriyani.
This is long hours cooking process.

for Goat leg marination

curd 3 tbps/100 gram
salt. -2 tspn
white vinegar  - 1 tspn
soy sauce  - 1 tspn
lemon juice - 1 no
green chilli 3nos
raw papaya paste _two tspn
red chilli powder - 1 tspn
black pepper pwd-1 tspn
red colour powder-little
ginger - two inch size
garlic - 8 pod
butter - 2 tbspn
oilve oil-1/4 cup
1/2tspn cardamom pwd
1/2 tspn cinnamon powder
for leg tempering
butter + oil
onion - 2 nos



For Biriyani

long basmati rice - 400 gram
oil + butter or ghee
bay leaves
cardamom
cinnamon stick
clove
onion
tomato - 2 nos
ginger garlic paste - 2 tsbspn
biriyani masala - 2 tpn
sliced potato

Mothod

wash whole-leg mutton and drain water completely.
add all the masalas in a mixer grinder grind well and add it whole-leg and marinate over night or 6 to 8 hours.
now first leg tempering in a heavy wide vessel add butten + oil , add chopped onion saute till onion trasulant , now place the marinated whole-leg and cook both side 20 minutes
(mutton whole leg will cooking time more depends on your country mutton)
now remove the whole leg and grill it or roast in pan.before placing leg for grill arrange sliced potatos and grill it each side 20 minutes.
now biriyani preparation

in a biriyani vessel add ghee + oil add bay leaves, cinnamon,clove cardamom when it splutter and onion saute till golden brown,add ginger garlic paste saute well , add coriender and mint leaves add chopped tomatos cook well.
add spice powders red chilli powder,turmeric powder and biriyani masala and salt mix well and cook for 2 minutes and add it leg roast gravy. ( water mesurement all gravies 1: 1/2 ) add 1/2 glass more boil the gravy add soaked rice and cook for 10 minutes and make a dhum for 20 minutes in a low flame.

Restaurant Style Mutton Chops with Green Masala

Mutton chops
Mutton chop pieces - 600 gram
whole black pepper - 1 tspn
fresh coriander seed - 1 tspn
green chilli - 2 to 3 nos
coriander leaves - few
ginger garlic paste - 2 tspn
salt - to taste
lemon juice - 1 n 1/2 tspn
gram masala powder - 1/2 tspn
Oil + butter - 2 tspn

wash and clean the mutton chops, add all ingredients in a mixie except oil and gram masala, grind it well and add it to a mutton chops marinate 10 minutes.
transfer the chops mutton into pressure cooker close the lid and leave  4 to 6 vessel.
after pressure release boil the mutton till water fully absorbed.
In  a separate pan heat oil add gram masala powder and add cooked chops mutton and roast it nicely.
finally sprinkle the lemon juice and coriander leaves mix well .
Transfer the mutton fry into serving plate.

This recipe, I learnt it from my mother and this is one of our marriage traditional tiffin vareity .

Mutton Semiya Biriyani - Muslim Marriage Tifiin
semiya - 800 gram
mutton - 1 1/4kg (medium pcs)
chopped onion - 1/2 kg
chopped tomato - 1/2 kg
ginger garlic paste - 8 tspb
oil - 1/2 cup gram
ghee - 1/4 cup
coriender leaves
mint -leaves
cinnamon - 1 inch size 2 nos
clove - 2 nos
cardamom - 2 nos
curd - 1/2 cup
green chilli - 5 nos
red chilli - 3 tspn
turmeric - 1/2 tpsn
salt - to taste

Method


Roast semiya with ghee.wash mutton and strain the water completely.In a wide pan add oil wait till it gets heated, now add cinnamon when it starts to crackle add chopped onion and fry  till it gets pink, then add ginger garlic paste stir it for  2 min continuously, after raw smell goes, add chopped tomato, curd, chilli powder, salt, add mutton, carrot, green chilli. stir well  and keep the flame in medium very heat and  cook for 25 minutes.after mutton well cooked
Add water 1: 1 ½ , so for 800 gram semiya  add(1,200 ml water ) and boil it add roasted semiya and cook for  5 minutes.
Switch off the flame and leave to dum for 2 minutes and serve with pickle or any chutney variety-

Mutton Pasta - Meat Pasta - Boneless Bow Pasta


Macroni/Pasta is very easy world wide dinner party recipe, Kids love this pasta bcoz easy to eat so this boneless mutton pasta is very perfect for kids lunch box too.Also we can prepare with chicken mutton or vegetable.



Ingredients


Cooked mutton pieces - 6 nos
bow shape pasta - 2 cup
palak leaves - 1 cup
walnut - 3 nos
green chilli - 1 no
ginger - small piece
garlic - 2 pod
onion - 1 no
butter -+ oil - 2 tspn
salt - to taste





Bow Pasta


Method
Cook pasta separately as per packet direction
cook palak /spinach leaves and strain it and wash with cold water and strain again.
now add strained spinach , walnut,onion, garlic,ginger, green chilli grind it.
In a  cooker  add butter + oil add ground green paste and saute for 2 to 3 minutes and add mutton pieces and stir it well and close the cooker lid and leaves 3 to 4 whistles.
after cooker weight release add cooked pasta and mix it well and boil for 2 minutes.
very healthy meat (Mutton ) pasta is ready serve for dinner.

How to make Meat Ball Fettuccine

Meat Ball Fettuccine





Ingredients


Meat Ball Fettuccine

Fettuccine – 400 gram
Tomato – 200 gram
Tomato Paste – 2 tbspn
Onion – 150 gram
Garlic pod  big – 3 nos
Red chilli powder – ½ tspn
Chicken Stock Masala (maggi or Knor)  – ½ cube
Hakka noodles masala – ½ tspn
Salt to taste
Soy sauce – 1 tbspn
Green chilli – 1 no
Capsicum  chopped  - 1 tbspn
Carrot grated – 2 tbspn
Spring onion – 1 spring

 For the meat ball
 Boneless mutton – 250 gram
Ginger garlic paste – 1 tspn
Pepper powder – 1 tspn
Paparika powder – ½ tspn
Coriander leaves – 3 tbspn chopped
Oregano – ½ tspn
Lemon juice – 1 tbspn
Clove pwd – ¼ tspn
Cinnamon pwd – ¼ tspn
Bread crumbs – 1 tbspn
Roasted channa dal  pwd – 1 tbspn


Method

 for meat ball : 


Wash mutton kheema (ground Meat)drain the water completely add coriander leaves, ginger garlic paste, paprika powder, black pepper powder, lemon juice, cinnamon powder, clove powder and grind it well, 



transfer the meat mixture into a bowl add crumbs powder and roasted gram (pottu kadalai) mix well and divide equal gooseberry size ball keep aside 10 min. 



 After 10 minutes in a pan add oil and shallow fry all the meat balls ,keep aside
 For gravy 

Take another pan add butter + oil. Once oil gets heated add chopped onion and green chilli stir it well until light golden brown color. Add all vegetables and tomato paste cook for 10 minutes.







for fettuccine: 

take large vessel add water , salt . olive oil and wait until water gets boiled well. once the water is boiled well add 400 gram fettuccine in to it. Leave for a while until the fettuccine gets cooked well,after cook, drain it well and keep it aside.


 Now add hakka noodles masalas and chicken stock saute well.



Grind together red chilli flakes,garlic,tomato in a mixer and add it to a vegetable mix add salt and required amount of water and cook for 5 minutes.Once the masala gets ready, add the fettuccine in to it, mix it thoroughly until all the masala gets stick in to it. 
Finally add fried meat balls and give gentle mix.




Note: You Can make any type of pasta and prepare same method, Instead of meat you can use chicken or prawn, Vegetarian can substitute  Palak and paneer Meat ball prepare same method. If you don't have hakka noodle masala you can use any other pav baji masala or channa masala little
