Ingredients


Chana Dal(Chickpea/Bengal gram lentil - 75 gram
kadalai paruppu/கடலை பருப்பு )
Ghee – 4tspn
Milk - 100 ml
Sugar – 40 gram
cardamom pwd  -1/4 tspn
badam flakes& pista flakes – 2 tspn
Almonds, walnut for granishing







Method

Wash and Soak dal in 1 Cup water for 4 hours.
Cook channa dal with 1 cup of water,strain it and mash well
Heat Nonstick pan add 2 tspn ghee and add mashed dal, stir well and cook for 10 minitues.
Now add 50ml milk and fry on high heat till it get dry.






Again add 50ml milk and 2tpsn ghee cook for 5 minutes     
Finally add cardamom powder, sugar and badam pista flakes and fry on high heat for another 5 minutes.
Serve hot or simply spread on plate and sprinkle some extra chopped nuts.



Let it cool down completely. Cut in desired shape, transfer in air-tight container and store in fridge.

Omani Halwa - 3 with Bread Sandwich




Halwa is a fundamental part of daily life in Oman, often served at special occasions like weddings, funerals, or other social gatherings. It is the standard food when greeting guests, regardless of class or social distinction, along with bread Arabic coffee, which is known as qahwa.




Ingredients

Corn Flour - 50 gram

Water – 100 ml

Brown sugar – 100 gram

Roasted Soji (rava) - 1 tbspn

egg - 1/2 of 1 (optional)

Water – 100ml

Saffron – 1 tbspn

Cardamom pwd – 1 tbspn

Rose water – 1 tspn

Cashew nuts – 50 gram

Pista flakes – few

Salt – pinch

Butter – 50 gram

Ghee – 1 tbspn





Method

In a wide nonstick pan heat the ghee and fry the cashew nuts keep aside.

In the same pan, boil the water along with brown sugar and cardamom powder. Boil for 5 to 10 minutes.

In a bowl of 100 ml water, add flour mix well and add it to sugar syrup stir continuously without any lumps.

Add butter ,saffron , cardamom powder , sprinkle the soji and stir continuously.

finally add fried cashew and pista Flakes. Omani halwa is ready to serve.

Serving suggestions: Slightly Butter fried bread or bun with Omani halwa or With Biriyani.
Usually we have this halwa (beet rooot,carrot , pumpkin)  with bread or roti. we can give this type of halwa to children they love to eat.

Yellow Pumpkin Halwa


Pumpkin Halwa

Ingredients

Grated Yellow pumpkin - 200 gram
 unsalted butter - 1 tbspn
Cardamom – 2 
Hot Thick Milk – 25 ml
Saffron – 3 strands
Sugar – 100 gram
Ghee – 1 tbspn
Broken Cashew nuts – 6 
Black raisins – 6 

For garnishing

pista flakes – 1 tspn
Cashew nuts

Method

In a wide pan add ghee, broken cashew and raisins fry for golden brown. Remove the fried cashew and raisins from the pan keep aside. Soak the saffron in hot milk.
In the same pan,  add butter and grated pumpkin and  fry for 5 to 7 minutes
Now add cardamom and milk mix well and cook for 5 minutes.
Add the sugar and keep stirring and continuously 






Add the fried cashew and raisins.  when the ghee oozes out the halwa comes out with  a  nice texture. Remove from the heat. Garnish it  with pista flakes & Cashew nuts.

Dessert Delight/ Tri Fruits Halwa


Dessert Delight or  Tri Fruits Halwa:

Ingredients

Dates                - 200 grams 
black raisins      - 25 grams
figs                    - 25 gram
thick milk           - 100 ml
sugar                 - 2 tbspn
nuts                   - 50 grams  (badam,pista,walnut,cashew)
saffron               - half tspn




Method


Remove seeds from dates.
Dates, raisins, figs - - -    soak for  5 minutes in a hot water 
Add milk and grind in a mixer/blender.
In a pan,  add ghee (or) butter .  
Add ground dates and  stir well  continuously, while it cooks for 5 minutes.
 Add sugar and saffron.   Keep stirring and mixing  continuously so that  it does not stick to the pan. 
Add the mixed nuts.  (Note:  For a variation:   You can grind the nuts with little milk and add it) 
When the ghee oozes out and the halwa comes out to a nice texture, remove from heat. 

Saffron and Raisins are a good cure for common cold. 

You can use this as a jam to spread it on a bread slice to give it as a snack to the kids.

Fig with Tomato Halwa

Fig is a good source of hemoglobin, which is very good for aneamic patients and also we can prepare fig as halwa, chutney or juice. Along with the mutton biriyani we prepare this Sweet.


INGREDIENTS:
Fig fruit (honey soaked) – 2 tbspn
Ripened tomato – 5 no’s
Dates– 5
Sugar – 50 grms
Cardomom – 2
Ghee – 1 tbspn
Butter – 1 tbspn
Cashew nut – 25 grms




METHOD:
Boil the tomatoes in hot water so that the skin can be easily removed.
In a pressure cooker put the skin peeled tomatoes along with dates, figs, cardamom and butter, mix it well and make them to boil.
Cook them  till all the water goes  and  add the sugar to it, stir well for halwa consistency.
Roast the cashews in ghee and finally add to the halwa.
Very delicious and healthy  tomato fig  halwa is ready.
