Manathakkali keerai (sunberry Leaves) Fried Rice

Greens has iron content and good for health . Usually  children hates greens,  so we can add this greens to a fried rice which they will like. Sunberry leaves are good for stomach problem and it cool down our body heat.

Ingredients
3 servings
200 gram - basmati rice
1/2 tsp soy sauce
1 tsp salt ­ ­
1 tsp butter-
1/2 bunch Manathakkali keerai (sunberry Leaves)
1 carrot - thinly chopped lenghwise one inch size
3 stick - chopped spring onion
1/2 cup cabbage - thinly sliced lengthwise
1 tbspn - tomato ketchup
1/4 cup - capsicum chopped
1 tbspn soya sauce
2 pinch - sugar
2 pod - chopped garlic
1 green chilli chopped
3 tbspn - butter
2 Egg


Method
Soak basmati rice for 10 minutes In a wide vessel boil the 800 ml water add rice,vegetable stock cube, soy sauce,salt and butter,check whether the rice is cooked and drain the water, make sure rice is not over cooked.Transfer rice into a plate and cool down. cut spring onion green part keep aside.


In a vide pan add butter and temper with chopped garlic,green chilli and sugar then add all veggies and sping onion white part, keep the flame high and saute for 5 minutes. now add manaththakkaali kiirai and capsicum mix it well and saute 5 minutes



Add tomato ketchup,soysauce,white pepper and salt mix well finally In a bowl add egg, add little salt and black pepper mix it well.


Heat a pan add, one teaspoon butter and pour the egg mix and cook one side 1 minutes and flip the egg and cook another side 1 minutes and chop it nicely now add prepared fried vegetables,chopped egg and cooked rice and mix it well. Saute well for 5 minute in high flame and transfer fried rice to serving bowl serve with ketchup.

Brahmi and Dill Leaves Chicken Soup

 Vallaarai kiirai soup
 Ingredients

Brahmi and Dill Leaves Chicken Soup
Brahmi leaves – half cup
Dill leaves – half cup
Boneless chicken 150 gram
Chopped green chilli
Sogo/sabudana – 1 tbspn
Magi chicken stock or knor – 1 cube
Lurpak butter – 1 tbspn + 1 tspn
Egg – 1 no
Corn flour powder – 1 tspn



Method

In a cooker, add 2 glasses of water boil the Sogo / sabudana/javvarisi and chopped green chilli.
 Add, Brahmi leaves, dill leaves, boneless chicken ,magi chicken stock cube and grated sweet potato salt and add two glasses of water so total 4 glasses of water and leave it for 3 whistles.
Transfer the cooked ingredients into wide vessel and keep it for boiling, blend with blender coarsely .Add one tablespoon butterThen add the corn flour mixed with half water boil it for 2 minutes.
Beat the egg till fluffy, now slowly pour the beaten egg (like Tread) carefully to the soup keep stirring continuously in circular moment in low flame.
 Finally add required salt, pepper powder, chives and add  one teaspoon butter mix it well. Transfer soup in serving bowl.
Serve with grilled chicken, soy sauce, vinegar with green chilli and litte brahmi leaves.

Really it will taste so good than the hotel soups.

Kesari is a famous festival recipe. We can prepare various kesaris like pineapple kesari, nuts kesari, plain kesari fruit kesari, beetroot kesari Always i would like to prepare this colourful flag recipe 
this colour laddoo attracts the kids and they eat well.

UAE Flag Recipe
Ingredients
Rava / semolina   = 100 + 100 + 100 + 100  - Total 400 gram
Sugar – 150+150+75+125 – 575 ml
Ghee – 6 tbspn
Hot water – 175+175+175+100  ml
Vimto – 75 ml
Milk – 100 ml
Pista ilachi essence – 2 drop or green food coloring
Kesar food colouring + Strawberry essence – few drops


Salt - 1/4 pinch





Method:

In a big pan, add 12 tsbspn of ghee, Roast 400 grams of rava (semolina) and Leave it to cool. Divide the 400 grams of roasted semolina into 4 parts(100 gram each).

For red colour kesari :

In a pan, heat 175ml of water and add red food colour + strawberry essence to it and add 1/2 pinch of salt to it. 

Reduce the flame to middle flame.

Sprinkle the 100 gram of roasted semolina on it and stir continuously for 5 minutes.

Add sugar and stir it well for 3 minutes.

Finally add ghee on it and stir it well and remove from heat.

Transfer it to a plate . Let it cool and make it into a small flower shape or desired shape.

For plain white colour kesari:

Boil 100 ml of milk and 75 ml of water. 

Reduce the flame to medium and sprinkle 100 grams of roasted semolina on it. Stir the mixture continuously without any lumps for 5 minutes.

Add sugar to it and stir it well for 3 minutes.

Finally add some ghee and remove from heat.

Transfer it to plate. Let it cool and make it into a small flower shape or desired shape.

For green colour kesari :

In a pan , boil 175 ml of water and add pista elachi essence and 1/2 pinch of salt to it.

Reduce the flame to medium flame and sprinkle 100 grams of roasted semolina to it and stir continuously for 5 minutes . Add the sugar and stir it well for 3 minutes.

Finally add ghee and stir it well and remove from heat.

Transfer it to plate. Let it cool and make it into small flower or desired shape.

For black colour kesari :

Boil the 100 ml of water and 75 ml of vimto.

Reduce the flame to medium and sprinkle 100 grams of roasted semolina and stir it continuously for 5 minutes without any lumps. 

Add sugar stir it well and cook it for 3 minutes.

Finally add ghee, stir it well and remove from the heat.

Transfer it to plate. Let  it cool and make it into small flower shape or desired shapes.

Now arrange all the 4 colors(red, green, white and black) like a UAE national flag .

Mutton Pasta - Meat Pasta - Boneless Bow Pasta


Macroni/Pasta is very easy world wide dinner party recipe, Kids love this pasta bcoz easy to eat so this boneless mutton pasta is very perfect for kids lunch box too.Also we can prepare with chicken mutton or vegetable.



Ingredients


Cooked mutton pieces - 6 nos
bow shape pasta - 2 cup
palak leaves - 1 cup
walnut - 3 nos
green chilli - 1 no
ginger - small piece
garlic - 2 pod
onion - 1 no
butter -+ oil - 2 tspn
salt - to taste





Bow Pasta


Method
Cook pasta separately as per packet direction
cook palak /spinach leaves and strain it and wash with cold water and strain again.
now add strained spinach , walnut,onion, garlic,ginger, green chilli grind it.
In a  cooker  add butter + oil add ground green paste and saute for 2 to 3 minutes and add mutton pieces and stir it well and close the cooker lid and leaves 3 to 4 whistles.
after cooker weight release add cooked pasta and mix it well and boil for 2 minutes.
very healthy meat (Mutton ) pasta is ready serve for dinner.
