Oats Popcorn Tandoori Chicken Fry


Oats Pop Corn Tandoori Chicken Fry


 serves - 2


Ingredients


Boneless Chckien – 200 grams


For marination:


Red chilly Powder ¾ tspn

Shan Tandoori  masala– ¾ tspn

Ginger Garlic paste – ¾ tspn

Lemon juice – 1 tspn

Salt – ½ tspn

Melted butter – 1 tspn


For mix:


Egg white – 1


For coating


Oats – 1 tbspn

Corn Flour  - 2 tspn

Bread Crumbs – 1 tbspn


Oil + butter – for frying









Method


Wash and cut the boneless chicken into small bite size pieces.

Add above-said ingredients for marination  to chicken pieces and  mix well.


Marinate for 10 minutes.

Beat the egg white to a  fluffy texture and add to the marinated chicken and marinate for ½ hour.

Mix  the corn flour well with  oats,bread crumbs without any big  lumps.

Add the chicken pieces and  freeze for 1 hour.

Heat  the oil in a fry pan over  medium heat.

 Fry the all the pop corn chicken   until golden brown.Drain the excess oil. 

And serve it hot with cucumber salad.


Yummy   starter (appetizer)  & snacks for all.

Palak Mint Paneer Curry


Palak Mint Paneer Curry
Greens like Spinach (Palak)mint,coriender,curryleaves  has more iron content
Palak and Mint leaves have many medicinal values





Magic mingle Kalyani's May 2012 , Main two Ingredients are Mint and Paneer nice combination. 
Ingredients

Palak – 1 bunch
Paneer – 100 grams
Onion 3
Tomato 2
Green chillies 2
Ginger – 2 inch size
Mint leaves – ¼ cup
Garlic – 3 nos
Salt – to taste
Red chilli ,coriander,turmeric,garam masala powders – each ¼ tspn

for  tempering

Butter+Oil - 2 tbspn
Cumin seeds - 1 tspn

Method

Heat a large pan. Add oil and   Onion,ginger, garlic, tomato, green chilli palak and Mint cook for  5 minutes.
Let it cool. 
Grind the mixer in a blender (mixer) to a fine paste.
In separate pan, heat the oil +butter and add cumin seeds fry for ½ a minute.
Add the ground paste . 
Add the paneer cubes directly.
(if you want fry the paneer in oil or butter)
Let it boil for 5 minutes.
Serve it with chappathi ,kuboos, Ghee rice or dosai.You can have this curry with bread also.


This curry is very healthy for all, especially for the children and for the pregnant women.

Dessert Delight/ Tri Fruits Halwa


Dessert Delight or  Tri Fruits Halwa:

Ingredients

Dates                - 200 grams 
black raisins      - 25 grams
figs                    - 25 gram
thick milk           - 100 ml
sugar                 - 2 tbspn
nuts                   - 50 grams  (badam,pista,walnut,cashew)
saffron               - half tspn




Method


Remove seeds from dates.
Dates, raisins, figs - - -    soak for  5 minutes in a hot water 
Add milk and grind in a mixer/blender.
In a pan,  add ghee (or) butter .  
Add ground dates and  stir well  continuously, while it cooks for 5 minutes.
 Add sugar and saffron.   Keep stirring and mixing  continuously so that  it does not stick to the pan. 
Add the mixed nuts.  (Note:  For a variation:   You can grind the nuts with little milk and add it) 
When the ghee oozes out and the halwa comes out to a nice texture, remove from heat. 

Saffron and Raisins are a good cure for common cold. 

You can use this as a jam to spread it on a bread slice to give it as a snack to the kids.

Mint Masala Vadai


Mint Masala Vadai:  

Masala vadai is one of the favorite snacks of my mother and my son.  It goes very well with uppuma or pongal.  During Ramalan fasting time,  we make this vadais and nombu kanji. Adding mint to the masala vadai,  gives more health benefits. 
 For a different variation,  we can substitute chick peas for channa dal to make these vadais. 

 Ingredients

Channa Dal (kadalai paruppu)   - 200 gram
Puthina (Mint leaves) – 1 cup (chopped)
Ginger – 1 inch size
Green chillies – 2 
Garlic – 3 pods
Onion -  1  (chopped)
Clove – 1 
Cinnamon – ½ inch size
Saunf (fennel seeds) – ½ tspn
Salt – to taste
Curry leaves – few
Whole red chillies – 2 


Method 

Soak channa dhal for 1 hour and drain the water completely.
Divide into 3 portions.
Add saunf, cinnamon, clove , ginger, garlic and  whole red chillies with first portion of channa dhal  and grind  to a fine paste. Set aside.
Coarsely grind  the remaining soaked channa dhal .
 Mix  the dal paste,  coarsely ground channa dal, chopped pudina, onion, green chilles and curry leaves together  with a fork. 
Make small  size balls and flatten it slightly with your finger.
Heat oil in a pan and deep fry all them all to golden brown.  
 Drain the excess oil and serve hot.

Egg Pepper Idly





Idli is a very light South Indian breakfast.  
It digests easily and it is a great breakfast for all age groups. 
 In this  idli recipe,  adding pepper , which have medicinal values to cure cold ,cough, throat infection to babies.
Eggs are a useful source of protein, iodine and essential vitamins and are almost indispensable to the cook.
You can start this idli to your baby from Eight month and above.





Egg Pepper Idly

Idli batter – 5 soup spoonful  (for about 5 idlies) 
Egg – 1 
Pepper powder – 1 tspn
Salt – ¼ tspn
Ghee – 2 tspn

Method

Add pepper and salt in an egg and beat to a  fluffy texture.
IIn the idli plates, spread little ghee and pour the batter -   ¾ qty.
On top of the  batter,  pour the egg mix,  equally in all idlies. 
 cook for 7 to 10 minutes.

Soft pepper egg  idlies are ready to serve. 
It is a healthy breakfast or a snack for all age groups. 





Definitely babies and kids will enjoy this Idli.

Idli Cake


Idli Cake


Idli is a very light South Indian breakfast.  
It digests easily and it is a great breakfast for all age groups. 
Eggs are a useful source of protein, iodine and essential vitamins and are almost indispensable to the cook.
You can start this idli to your baby from Six month and above.
Method - 1
Ingredients

Idli batter – 5 soup Spoon ( about 5 idlies)
Thick jaggery syrup – 5 tspn
Ghee – 2 tspn
Egg – 1 no
Salt – 1 pinch

How to make

Beat egg with Jaggery syrup   to a fluffy texture.
In the idli plates,   grease with little   ghee and pour the idli  batter ¾ qty.
On top of the idli batter, pour the egg with jaggery mixture - equally for 5 idlies.
Close the idli cooker and cook for 7 to 10 minutes.
 Yummy Jaggery idli for babies, kids delight 
For jaggery syrup:
Take 50 gram jaggery adds little water and heat it up, filter the syrup.
we can add grated coconut  and cardamom powder.

Mutton (bones)  soup  :  

 This soup is very healthy, especially for pregnant women.  It gives them the nutrition and strength that they need  during the pregnancy, labor, delivery and also during the recovery period after that. 

This soup is great for toddlers and adolescent girls as it helps to strengthen their bones in growth stages.  You can add this soup with mashed rice to  feed the infants.  

This soup has medicinal values to cure cough and cold symptoms. 


 Ingredients

To cook

Mutton bones (preferably ribs)  – 6 pieces
Ginger garlic paste – 1 tspn
Onion – 1 
Tomato – 1 
Salt – to taste
Pepper – ½ tspn
Coriander powder – 1 tbspn
water - 600ml  (about 3 glasses ) 


To temper :

Gingelly oil or ghee – 2 tspn
Chopped onion – 1 tbspn
Ginger garlic paste – ¼ tspn
Coriander leaves – few
Garam masala – ¼ tspn
Coconut milk – ¼ cup

Method

In a pressure cooker,  add all the above-said  ingredients under the label "to cook", including water. 
Cook over medium flame and  leave for  4 to 5 whistles.  Set aside.
Wait for the pressure to be released on its own. 
Bring back the cooker over medium heat. 
Add coconut milk and boil for 3 minutes.
Temper the above-said ingredients  in another pan and add to the cooked mutton soup.
 Healthy and easy to cook mutton soup is ready to serve.

South Indian Mini Thali with Yam Tikki/SeenaiVadai




Mini Meals /Mini Thali/Variety Rice is one of the rich , famous South Indian  Meals. This Variety Meals looks yummy and colourful and much filling.It is even seen in Hindu Wedding meals  






Mini Thali  => {Three type of variety rice ,passadi,pappadam, roti or chappaathi,chips ,Sweet,pickle.}






Curd Rice
Bisebelabath
Lemon Rice
Mango  and Raw mango thokku
pappaddm
Sweet - kesari laddoo
Potato Fries or potato chips
Salad










Yam Tikki 



Yam Tikki
Yam Tikkis /seenai Vadai

Yam (senai) – ¼ kg
Green chili – 1
Garam masalam – ½ tspn
Salt – ¾ tspn (or) to taste
Chopped Onion – 1
Coriander leaves – few sprigs
Red chili powder – ¼ spn
Saunf (fennel seeds)  - ½ tspn
Grated ginger – ¼ tspn

Maida (all-purpose flour) , corn flour,  rice flour –  1 tspn each 
Roasted gram powdered (pottukadalai) – 1 tbspn

Oil – needed qty


Method

Wash and peel the yam and cut into big pieces.
Add ¼ salt and cook it with enough water.

strain and mash the Yam well and  keep aside.
Grind saunf, coriander leaves, grated coconut and green chili to a coarse paste.

 Add salt, red chili powder, garam masala, chopped onion, ground paste to mashed yam.
Add Maida, Corn flour, rice  flour ,  roasted gram powdered and mix well.



keep aside for 10 minutes.
Make goose berry sized balls.  Shape the balls  into  the way you want them to be. Heat oil in  a non stick pan and  deep  fry them until golden brown.
