Kerala Special Vegetable Sambar
 
 
 
 Most Keralites are celebrating ONAM Festival.  They prepare Onam sadhya which is a Kerala Special Thali and has as many as 29 items in one Thali. Out of these items Mixed vegetable Sambaris one such dish.Main Side dish for Onam Thali.  I wish to give a treat to my viewers by providing this simple and quick to make recipe - Kerala Special Mixed veggie Sambar.
 
 
 
Serves: 6 persons
Preparation Time: 20 minutes
Cooking Time: 30 minutes
 
 
 
Ingredients
For Dhal
Thur dhal – 200 gram
Turmeric pwd – ¼ tspn
Methi seeds – ¼ tpsn
 
 Vegetables
(Yam,pumkin,beans,carrot,tinda,brinjal,raw manga,big cucumber,drumstick, green banana,bitter gourd – ½ kg)
Red chilli pwd – ½ tspn
Coriander pwd – ½ tspn
Small onion – 10nos
Big onion – 1
Green chilli – 2 nos
Tomato – 2 nos
Kudampuli – 3 nos
 
For tempering
Oil KL nirmal coconut oil (or) sunflower oil – 4 tspn
Ghee – 2 tspn
Whole red chilli – 3 nos
Mustard seeds – 1 tspn
Cumin seeds – 1 tspn
Garlic – 4 pods
Curry leaves – few
Eastern Sambar pwd – 2 tspn
 







Method
Wash dhal and add water , turmeric pwd, methi seeds and  cook the dhal in a pressure cooker until soft, mash it and keep it aside.
Wash kudampuli and soak it in a hot water.
Heat the cooker add 1 tspn oil temper with mustard seeds, curry leaves.
 
Add onion, tomato and green chilli sauté  for 5 mins.
Add all the veggie mix well and add red chilli pwd, coriander pwd turmeric pwd, salt and  stir it well add 1 glass of water and  close the cooker lid , leave it for  2 whistles and remove from the heat.
In a wide vessel temper with 3tspn oil + ghee,mustard seeds , whole red chilli , curry leaves , garlic, asofeotida fry for  2 to 3 min.
Add onion, sambar pwd sauté well and add mashed dhal, add required amt of water and  cook for 5 min.
Now add the cooked veggies, soaked kudampuli and cook for 10 min.

 
 
 Note: Keralites are using kudmpuli for puli kuzmpu/katta salana, I always use bitter gourd in the sambar, if we cook bitter gourd with sambar we couldn’t find the bitter taste.If you don’t have eastern sambar pwd , use any other brand.

Seven Veg Sambar ஏழு கறி சாம்பார்
Mixed Vegetable Sambhar
Seven  Veggie Sambhar

Ingredients 

For cooking frozen vegetables:

Beans - 6
Carrot - 1
Bringal - 3
Cluster beans - 6
Drumstick - 1
Chayoto – 50 gram
Pumpkin – 50 gram
Tomato – big 1 no
Small Onion – 10 nos
Green chilli – 2 no
Sambar powder – 3 tspn (sakthi or Aachi or Eastern)
Turmeric powder – ¼ tspn
Jaggery -  few
Tamarind – small lemon size ball

For dhal

Toor dal – 150 gram
Onion – 1 big or small onion 8 nos
Asofeitida – ¼ tspn
Turmeric pwd – ¼ tspn
Methi seeds – ¼ tspn


For tempering

Oil - 3 tspn
ghee - 1 tspn
small onion - 5 crushed
garlic - 2 nos
coriander leaves  - few
curry leaves - few


for garnishing - coriander leaves few

 Method

1. Wash and cook the dhal in a pressure cooker, mash it well and keep it aside.
    Soak tamarind into hot water and extract the pulp.

2.  Wash and cut all the vegetables desire shape .

3. In a wide vessel add all the vegetables and add 3 cups of water , turmeric and salt     and cook  for 5 minutes then add sambhar powder and cook for 10 minutes on low heat.

4. Add tamarind extract stir it well and 

5. Add them all into the cooked and mashed dhal, add jaggery, little curry leaves  stir it  well  and cook over medium heat for  5 to 7 minutes

6. Heat a vessel.  Temper the above said ingredients one by one and add it to sambar and mix well.Transfer the sambhar into a wide bowl and garnish with coriander leaves.

7. Serve hot with idly or dosa

Sambar goes well with plain rice, idlies, dosais and vadais.   It can be prepared in different variations and the taste differs as per the different methods.

Araithu vitta Frozen veg Sambar


Araithu vitta Frozen veg Sambar:

For dhal:

Toor dhal + moong dhal - 100 grams
turmeric powder - 1/4 tpsn
big Onion – 1
methi seeds – ½ tspn
Garlic – 2 cloves
Oil – ½ tspn

For cooking frozen vegetables:

Chopped Onion – 1 
Chopped Tomato – 1 
Frozen drumstick – 2 inch pieces  - 4 
Frozen mixed vegetables carrot, beans, peas – each 1 tbpn
Turmeric powder – ¼ tspn
Salt – to taste
Green chilli – 2 
Water – 2 cups
Tamarind pulp – 3 tbpn

For Grinding

Large Tomato – 1 
Grated Coconut   - 3 cubes
Roasted gram – 1 tspn
Sambar powder – 1 tbspn
Curry leaves few

For tempering: 

Oil - ghee - 1  1/2 tbpn
mustard seeds - 1 tspn
methi seeds – ¼ tspn
curry leaves - few
asafoetida -  2 pinches



   Method

1.   Wash and cook the dhal in a pressure cooker, mash well and keep it aside.
2.    Grind the above said ingredients in a mixer to a  smooth paste.
3.    In a wide vessel, cook all the vegetables with turmeric and salt and water   for 10 minutes.  Add the Ground paste and tamarind pulp . Stir well.   Add enough water and cook for 5 minutes on low heat.
4.    Finally, add the mashed dhal and stir well.  Heat over medium heat for 3 minutes. 
 5.  Heat a vessel.  Temper the above said ingredients and add it to sambar.   Stir well.  Serve it hot with Plain rice.

 Sambar goes well with plain rice, idlies, dosais and vadais.   It can be prepared in different variations and the taste differs as per the different methods. 


Jaleela's Tips

If you have more drumsticks remove the skin,  and cut into 2 inch pieces and  put it in a zip lock bag and store it in freezer.
 You can also cook 1/2 kg dhal and divide into 3 parts and pack it air-tight and store it in the freezer.

Pumpkin bitter gourd sambar

Linking to magic mingle Two Ingredients Pumpkin and whole red chilli.30 minutes meal mela , Nithu's Healthy food for healthy kids - combo meal for kids.

Serves: 3
Preparation Time : 10 min
Cooking Time: 20 min


For dhal:

Toor dhal + moong dhal - 100 grams
turmeric powder - 1/4 tpsn
big Onion – 1
methi seeds – ½ tspn
tomato – 1
garlic – 3 pods

for cooking the vegetables :  

small onions - 2 ( chopped)
onion big - 1
tomato - 2  (chopped)
pumpkin -  150 gram
bittergourd – 3 slices
carrot – 3 slices
salt to taste
sambar powder - 3 tspn
turmeric powder – ½ tspn
water – 2 cups
tamarind pulp - 3 tbspn

for tempering: 
Oil - ghee - 1  1/2 tbpn
mustard seeds - 1 tspn
whole red chilli – 2 pieces
curry leaves - few
asafetida -  2 pinches

For garnishing
Coriander leaves



Method

1. Wash and cook the dhal in a pressure cooker, mash well and keep it aside.

2. In a wide vessel,  cook all the vegetables with the masala  for 10 minutes.  Add the  tamarind pulp.  Stir well.   Add enough water and  cook for 5 minutes on low heat.

3.Finally,  add the mashed dhal and stir well.  Heat on medium heat for 3 minutes. 

4. Heat a vessel.  Temper the above said ingredients and add it to sambar.   Stir well .  serve it hot with Plain rice.
