Pretty pink beet Hamuus
1.     Chopped and boiled   Beetroot – 1/4 cup
2.    paprika powder  – ½ tspn
3.    Boiled chick peas – 100 gram
4.    Lemen juice – two tspn
5.    Roasted white sesame seeds – one  tbspn + one tspn
6.    Garlic pod -  2 nos
7.    Salt to taste
8.    Oilve oil – 1 tspn for

For garnishing

1.     Olive oil – 1 tbspn
2.    Chopped and  Boiled beetrood – 1 tspn
3.    Thyme leave - few


Method
1.     In a mixie , powder the white sesame seeds and add chickpeas ,cooked beetroot, garlic and salt, olive oil  grind to a smooth paste.
2.    Transfer this ground  hamuus into a serving bowl and spread  lemon juice, paprika, sesame seeds and mix it well.
3.    Garnish with cooked beetroot and thyme leaves.
4.    while serving drizzle some olive oil.
5.    Serve with grilled chicken or mutton or kabab and kuboos.

This Hammus goes well with kuboos, rotti, naan and all grilled chicken or mutton . Very good spread for sandwich, shawarma and falafel sandwich

Persian Chicken kotlet (Cutlet)

Grilled Persian/Iranian Chicken Potato Kotlet/Cutlet.

Every Month we are posting MFB - Event ( Muslim food Blogger )- Hosted by Rafeeda (ThebigSweetTooth) Whenever time permit i am participate in this event.  I like to Prepare always Arabic Recipes , Iranian, Lebanese Recipes. This Month Challenge is Iranian Cusine. So I am Sharing Juicy Iranian Chicken Potato Pattice/Kotlet/Cutlet

I remembering our family visit Iranian Restaurant "Zaitoon" Near Our Home, we ate Iranian/ Persian kabab variety and Zaffroni Broad Beans Rice.The taste was amazing.



Near My home 2015 we visit Zaitoon Restaurant, Mutheena,







We tasted this yummy food zaffron flavor kabab and rice was amazing.

Percian Chicken kotlet (Cutlet)Iranian Chicken Cutlet

Ingredients
Boneless chicken – 250 gram
Potato = 100 gram ( one big)
Black pepper – 1 ½ tspn
Turmeric – 1 tspn
Salt – 1 tspn
Egg – one or required qty for binding
Plain flour – required qty for binding
saffron – ½ tspn
cinnamon pwd – ½ tspn
dried mint – 1 tspn

Percian Jewel saffron Rice and Chicken Cutlet


Method

Boiled potato and mash,

In food processor grind together chicken, pepper, salt, saffron.
In a bowl add mashed potato, ground chicken, beated  egg , cinnamon , mint , salt , flour and  mix it well.
Divide the ground chicken mix into equal quantity
Heat a sandwich maker grill  add butter + olive oil, take each portion to a patties shape, grill both side.

Note: you can shallow fry in a pan too.

Palak Hamuus - 2





Iron Key Ingredients - Palak
Preparation Time : 15 minutes
cooking time  15 minutes
serves : 5
Greens like Spinach (Palak) has more iron content. 
Palak hamuus - 2
Ingredients

  1. Palak – ¾ bunch
  2. White onion – one no
  3. White pepper pwd – ½ tspn
  4. Boiled chick peas – 100 gram
  5. Lemen juice – one tspn
  6. Roasted white sesame seeds – one tbspn
  7. Garlic pod 3 nos
  8. Salt to taste
  9. Oilve oil – required qty
For garnishing

  1. Olive oil
  2. Boiled chick peas
  3. Paparika powder
  4. Kuboos




Palak Humuus - 

Method

  1. Boil water in vessel add palak , garlic onion cook for 5 minutes remove from heat and strain it
  2. In a mixie ,add chickpeas ,white sesame seeds, salt  and add strained palak, garlic and onion  graind smooth paste.
  3. Transfer this palak hamuus into serving bowl spread olive oil sprinkle little paprika powder and serve with grilled item with kuboos.
  4. Eye catching healthy palak hamuus is ready

Avocado Almond Chutney




Best Side Dish for Paleo Diet, Healthy and Greeny.


Ingredients
Avocado – 1 no
Grated coconut – ¼ cup
Green chilly – 1 no
Ginger – small pc
Coriander leaves & curry leaves – ½ cup
Lemon juice – 1 tbspn
Badam – 15 no


Method

Wash and cut the coriander leave and curry leaves.
Soak badam in a hot water remove the skin
Remove seed and skin from avocado
In a mixie add all above (avocado, coriander,curry leaves,badam,green chilly, ginger  & salt grind to a smooth paste. Finally add lemon juice and mix it well.
Nice and healthy dips for grill and fry items. Very good for Paleo diet.

Note: If you are in hot tooth add more green chilly and ginger
Instead of coriander you can prepare with mint too.
also  we can use for bread sandwich spread
