Bakrid Special Goat Leg Biriyani






 Mutton raan is whole leg ,cooking large pieces , we can prepare gravy or biriyani.
This is long hours cooking process.

for Goat leg marination

curd 3 tbps/100 gram
salt. -2 tspn
white vinegar  - 1 tspn
soy sauce  - 1 tspn
lemon juice - 1 no
green chilli 3nos
raw papaya paste _two tspn
red chilli powder - 1 tspn
black pepper pwd-1 tspn
red colour powder-little
ginger - two inch size
garlic - 8 pod
butter - 2 tbspn
oilve oil-1/4 cup
1/2tspn cardamom pwd
1/2 tspn cinnamon powder
for leg tempering
butter + oil
onion - 2 nos



For Biriyani

long basmati rice - 400 gram
oil + butter or ghee
bay leaves
cardamom
cinnamon stick
clove
onion
tomato - 2 nos
ginger garlic paste - 2 tsbspn
biriyani masala - 2 tpn
sliced potato

Mothod

wash whole-leg mutton and drain water completely.
add all the masalas in a mixer grinder grind well and add it whole-leg and marinate over night or 6 to 8 hours.
now first leg tempering in a heavy wide vessel add butten + oil , add chopped onion saute till onion trasulant , now place the marinated whole-leg and cook both side 20 minutes
(mutton whole leg will cooking time more depends on your country mutton)
now remove the whole leg and grill it or roast in pan.before placing leg for grill arrange sliced potatos and grill it each side 20 minutes.
now biriyani preparation

in a biriyani vessel add ghee + oil add bay leaves, cinnamon,clove cardamom when it splutter and onion saute till golden brown,add ginger garlic paste saute well , add coriender and mint leaves add chopped tomatos cook well.
add spice powders red chilli powder,turmeric powder and biriyani masala and salt mix well and cook for 2 minutes and add it leg roast gravy. ( water mesurement all gravies 1: 1/2 ) add 1/2 glass more boil the gravy add soaked rice and cook for 10 minutes and make a dhum for 20 minutes in a low flame.

Iranian /Persian Jewelled Saffron rice

Every Month we are posting MFB - Event ( Muslim food Blogger )- Hosted by Rafeeda (ThebigSweetTooth) Whenever time permit i am participate in this event.  I like to Prepare always Arabic Recipes , Iranian, Lebanese Recipes. This Month Challenge is Iranian Cusine. 


So I am Sharing Rich Rice called the Name"Persian/IranianJewelled Saffron Rice.


Ingredients

Iranian Jewelled Saffron rice

Rice – 250 gram
Saffron – 1 tspn
Nuts ( Almond and pistachio)
Pomegranate
Berries
Raisins





Method

Soak soffron with hot water and little sugar to it.
Wash and soak rice , in a wide vessel add water bring to boil add soaked rice and salt cook 7 minutes. Drain the water completely,
In a non stick pan add butter add half of cooked rice, balance half add soaked saffron with sugar water and top of rice put hole four sides top to bottom . Make a dum for 10 minutes.
Transfer rice to a bowl mix chopped almond, red berries ,raisins,pistachio,red bean and pomegranate. 
Arrange the plate plain  rice saffron rice , serve with any gravy,kabab or cutlet and some salads & dips

Traditional Muslim Marriage Mutton Biriyani - Eid Al Adha Mubarak

May Allah unite all Muslims against the evil forces, and bless us to attain Jannah.



Biriyani is most popular in Muslims Marriage. In our Marriage we  prepare Mutton Biriyani, ennai kaththirikaai, thayir pachadi, mittaa khana.
This my family favourite Traditonal biriyani. 
We are Preparing the same in our Eid Festival too.


Mutton Biriyani


Muslim Marriage  Mutton Biriyani
Servers: 8 person
Preparation time: 20 min
Cooking time: 45 min
Recipe Source : My Own (chef Jaleela)
Ingredients:
Chicken with bones – 1 kg
India gate Basmati rice – 1 kg
Ripe tomato big – 8
Onion big – 8
Ginger garlic paste – 8 table spoon
Coriander leaves –  1 cup (chopped)
Mint leaves – ½ cup (chopped)
Green chili – 8 nos
Curd – 150 ml
Red chili – 3 tspn
Turmeric powder – ¼ tspn
Salt – to taste
Red colour – 2 pnch
Ghee – 2 tspn
Lemon – 1
Oil – 400 ml
Cinnamon – 2 “ size 2 nos
Clove – 4 nos
Cardamom – 3 nos
Method
  1. Wash and clean the Mutton and drain the water completely. Wash and Soak the rice for 20 minutes.
  2. In a vessel heat oil and temper the cinnamon, clove, cardamom. Then add chopped onions and stir for 2 min and close the lid and keep the flame low, leave for 5 min.
  3. Then add ginger garlic paste stir well and keep in low flame. After the raw smell goes, add chopped coriander leaves and mint leaves stir it for 1 min.


  4. Cut tomato lengthwise. Now add tomato and green chili, again close the vessel and leave on low flame cook  for 5 min. then add red chili powder, turmeric powder, salt and stir well.




  5. Allow to cook on low flame for 10 min, after that mash masala and tomato well. add the mutton and curd,squeeze half lemon juice, stir continuously and  keep on low  flame and  allow to cook  for about  20 min.
  6. Mean while in a big vessel pour enough water and boil, add rice which is to be cooked  ¾th. when the rice boils  squeeze half lemon juice.  (Approximately for biriyani boiling the rice  for 7 minutes  is enough)




  7. Now strain the ¾ cooked rice and put above the mutton gravy spread evenly  In 1 teaspoon of  water add colour powder(optional), mix and sprinkle above the rice. Now  allow to dhum for 20 minutes in very low flame.
  8. After finishing Dhum  top to bottom mix slowly.

Shahi Mutton Biriyani


Shahi Mutton Biriyani



ஷாஹி மட்டன் பிரியாணி

Flavorful shahi mutton biryani cooked with curd.

Ingrdients

For the Stock

1.    mutton – 350 gram
2.    clove – 3 nos
3.    cinammn – 1 inch size
4.    black cardamom – 1
5.    chopped garlic – ½ tspn
6.    chopped onion – 1 medium size
7.    salt
for ghee rice
1.    oil + ghee – 2 tbspn
2.    sha jeera – ½ tspn
3.    bay leaf – 2 nos
4.    cashew nut – 6 nos
5.    basmath rice –  250 gram
6.    garam masala – 1 tspn
for the gravy
1.    oil + ghee – 2 tbspn
2.    chopped onion – big
3.    curd – 100 ml
4.    kashmiiri chilli pwd – 1 tspn
5.    mace pwd – ¼ tspn
6.    chooped green chilli – 1 no


 Method 
   Wash mutton and drain the water completely.
    In a pressure cooker add oil + ghee temper with  1 to 7 ingrediets and close the lid and leave 8 whistles.


    Separate the mutton stock and mutton pieces and keep it  aside.





    
 In a  rice cooker add oil and ghee temper with shajeera, cashew nut, garam masala,bay leaf and 3 cup of mutton stock which we prepared  before  and cook the  ghee rice  to ¾ th done. 





  In a separate wok temper with oil + ghee, onion,  mace, green chilli , kashmiri red chilli pwd  and curd .now sauté well for 3 to 4 minutes , add cooked mutton pieces and add balance stock and  cook for 5 minutes.





   Now arrange into  two layers of mutton gravy and ghee rice and  sprinkle little red food colouring and do dhum for 20 minutes.
