Spinach Chicken Pasta Biryani


When biryani spices meet comforting pasta, magic happens.

This Spinach Chicken Pasta Biryani is a bold fusion of Indian flavors and creamy pasta, packed with greens, spice, and indulgence in every bite.


Main Ingredients

  • Oil: 4 tbsp

  • Green Cardamom: 2

  • Cloves: 2

  • Cinnamon: 1-inch piece

  • Onion: 2 medium, thinly sliced

  • Green Chilies: 2 small, slit

  • Ginger-Garlic Paste: 1 tsp

  • Tomatoes: 2 medium, cut into quarters

  • Red Chili Powder: 1 tbsp

  • Turmeric Powder: A pinch

  • Salt to taste

  • Chicken Breast: 250 g, cubed

  • Curd (Yogurt): 2 tbsp

  • Chicken Stock Powder: A pinch (optional)

  • Maggi Saran Wrap Mix (Taste Maker): ½ packet (optional)

  • Mint Leaves: 1 handful, chopped

  • Coriander Leaves: 1 handful, chopped

  • Spinach Leaves: 1 handful, finely chopped

  • Red Chili Flakes–Infused Oil or Red Chili Flakes:  ½ tsp 

  • Mixed Italian Herbs: ½ tsp

  • Pasta Cooking Water: 3–4 tbsp

  • Penne Pasta: 2½ cups, boiled al dente

  • Mozzarella Cheese: ½ cup


Method

1. Prepare the Base

  • Heat 4 tbsp oil in a wide pan.

  • Add cardamom, cloves, and cinnamon; sauté until aromatic.

  • Add sliced onions and sauté until golden.

  • Add slit green chilies and ginger-garlic paste; sauté until the raw smell disappears.

2. Tomato & Spice Masala

  • Add chopped tomatoes and cook until soft and oil begins to separate.

  • Add red chili powder, salt, and a pinch of turmeric; mix well.

3. Cook the Chicken

  • Add cubed chicken breast and sauté on medium heat until lightly seared.

  • Add curd and mix well to coat the chicken evenly.

  • Sprinkle a pinch of chicken stock powder and cook until the chicken is tender and well-coated with masala.

4. Greens & Flavor Boost

  • Add chopped mint, coriander, and spinach leaves.

  • Mix gently and cook for 2–3 minutes until the greens wilt.

  • Add ½ packet Maggi mix and stir well.

  • Pour in a little pasta water to loosen the mixture and bring everything together.

5. Combine Pasta

  • Add the boiled penne pasta and toss gently until evenly coated.

  • Drizzle the red chili flakes–infused oil for extra heat and aroma.

  • Adjust salt if needed.

6. Finish with Cheese

  • Sprinkle grated mozzarella cheese on top.

  • Cover and cook on low heat for 2–3 minutes until the cheese melts beautifully.


Serving Suggestion

Serve hot, straight from the pan, with a simple salad or garlic bread on the side.


Not quite biryani, not quite pasta—this truly is the best of both worlds.
Hearty, aromatic, and indulgent, it’s a delicious way to break the dinner routine.

Open Veg Pizza Three colour capsicum and Onion Pizza




Ingredients

Bread - white or brown - 8 slices 
Onion  - 2 nos roughly chopped
Three colour capsicum - required qty chopped little big size
black olives 
mozzarella cheese  - 8 tspn
tomato ketchup or pizza sauce      - 8 tspn
butter                      - 8 tspn
uppu - to taste



Very easy recipe for kids / veggie pizza / easy lunch box recipe




METHOD


spread butter to a bread and roast it slightly.

Just cut all the veggies evenly (onion and all colourful capsicum)  and arrange over the bread and keep black olives and sprinkle mozerella cheese.   Place the bread fillings in tray ,200 degree  preheated oven set to 5 to 7 minutes yummy healthy easy pizza is ready kids will enjoy.

Recently I participated in Foodshala Season - 8 
chapati also one of the recipe on that, Chef's appreciated this soft chapati.



Chapati is common food for diet people , adding  ragi flour and rainbow milk or milk with ragi is we can get healthy and very soft chapati.


Ingredients

Soft Wheat chappathi
Ingredients
wheat flour - 1 cup
ghee or oil  - 1/2 tspn
hot water - 1/4 cup
Ragi Flour - 1 tbspn
rainbow milk or milk - 2 tbspn
salt - to taste
sugar - 1/2 tspn



Method

In a bowl add wheat flour, ragi powder ,sugar, salt, melted ghee rainbow milk  mix it well and add hot water and mix with fork and leave 2 minutes, Now apply oil and your palm and make a smooth dough. And close the lid and rest for 10 minutes.
now divide dough into equal size balls , dust the flour and prepare thin chappthis with rolling pin.
Heat a tawa (pan) and put the prepared thick chapati and cook for  2 minutes flip over and cook for another 2 minutes.

Mini Paneer palak balls Sandwich




We can prepare this healthy palak balls  with long bun sandwich are  very good and healthy Breakfast for dinner,travel recipe and lunch box recipes.

Ingredients

Mini Paneer palak balls Sandwich
Chopped palak – 2 cup
Green chilli – 2 nos
Coriander leaves – hand full of
Onion – 1 no
Paneer – 100gram
Grated ginger – 1 tsbpn
Basan (kadalaimaavu) ¼ cup
Bread crumbs – 2 tsbspn
Garam masalas – powder ½ tspn
Salt – to taste
Oil – fry frying

For arranging bun sandwich

Butter fried Long bun
Tomato ketchup
Carrot cut in to round shape
Lettuce leaves

Method

In a bowl add , add washed and mashed paneer ,chopped palak,ginger , chopped onion, chopped green chilli, basan, bread crumbs and garam masalas and mix it well .
Prepare equal shaped mini balls ( gooseberry size).
Heat oil the oil in the pan deep fry all the mini balls golden brown.
Apply tomato ketchup in a bun and place the  lettuce on it side by side arrange the  carrot and place three or four fried mini palak balls on oit. Repeat the same for the rest of  sandwiches.
Healthy and power packed "mini palak paneer balls:" sandwiches are ready to serve.

Ingredients
Egg – 2 nos
Pepper pwd – ½ tspn
Salt – ½ tspn
Chopped Coriander leaves – few
Red chilli flakes – ¼ tspn
Moringa powder – ½ tspn
Chopped Small onion – 3
One big chappathi


Method

In a bowl mix well everything with egg .
Heat a pan add, one  teaspoon   olive oil + butter  and pour the egg mix and cook one side for one minute and flip the egg and cook another side 1 minutes. Remove from the pan.

For chappathi egg roll prepare chappathi and place the egg pancake over it, roll it and cut into bite size pieces.
You can serve with bread or long bun too.

How to make Meat Ball Fettuccine

Meat Ball Fettuccine





Ingredients


Meat Ball Fettuccine

Fettuccine – 400 gram
Tomato – 200 gram
Tomato Paste – 2 tbspn
Onion – 150 gram
Garlic pod  big – 3 nos
Red chilli powder – ½ tspn
Chicken Stock Masala (maggi or Knor)  – ½ cube
Hakka noodles masala – ½ tspn
Salt to taste
Soy sauce – 1 tbspn
Green chilli – 1 no
Capsicum  chopped  - 1 tbspn
Carrot grated – 2 tbspn
Spring onion – 1 spring

 For the meat ball
 Boneless mutton – 250 gram
Ginger garlic paste – 1 tspn
Pepper powder – 1 tspn
Paparika powder – ½ tspn
Coriander leaves – 3 tbspn chopped
Oregano – ½ tspn
Lemon juice – 1 tbspn
Clove pwd – ¼ tspn
Cinnamon pwd – ¼ tspn
Bread crumbs – 1 tbspn
Roasted channa dal  pwd – 1 tbspn


Method

 for meat ball : 


Wash mutton kheema (ground Meat)drain the water completely add coriander leaves, ginger garlic paste, paprika powder, black pepper powder, lemon juice, cinnamon powder, clove powder and grind it well, 



transfer the meat mixture into a bowl add crumbs powder and roasted gram (pottu kadalai) mix well and divide equal gooseberry size ball keep aside 10 min. 



 After 10 minutes in a pan add oil and shallow fry all the meat balls ,keep aside
 For gravy 

Take another pan add butter + oil. Once oil gets heated add chopped onion and green chilli stir it well until light golden brown color. Add all vegetables and tomato paste cook for 10 minutes.







for fettuccine: 

take large vessel add water , salt . olive oil and wait until water gets boiled well. once the water is boiled well add 400 gram fettuccine in to it. Leave for a while until the fettuccine gets cooked well,after cook, drain it well and keep it aside.


 Now add hakka noodles masalas and chicken stock saute well.



Grind together red chilli flakes,garlic,tomato in a mixer and add it to a vegetable mix add salt and required amount of water and cook for 5 minutes.Once the masala gets ready, add the fettuccine in to it, mix it thoroughly until all the masala gets stick in to it. 
Finally add fried meat balls and give gentle mix.




Note: You Can make any type of pasta and prepare same method, Instead of meat you can use chicken or prawn, Vegetarian can substitute  Palak and paneer Meat ball prepare same method. If you don't have hakka noodle masala you can use any other pav baji masala or channa masala little

Steamed Dori Fish with jaggery and chilli Sauce


Restaurant Style Steamed Dori Fish with jaggery and chilli

Fishes are good for health.  Instead of frying   we can steam and prepare with  red chilli flakce with jaggery sauce or  tamarind sauce or  schezwan it is good for our diet. Very easy to prepare this recipe.

Ingredients


Dori Fish – Flat fish big – 200 gram
Salt
 For the sauce
Gingely oil – 2 tbspn
Chopped onion – ½ cup
Chopped garlic – 1 tbspn
Soy sauce – 3 tbspn
Jaggery –syrub – 1 tbspn
Salt
Red chilli lakes  - 1 tspn
Green chilli – 1 no chopped
Oyster sauce – 1 tspn

Method

Chopped green onion – 2 tables (chop separately green and white part) green part for garnishin
Lettuce leaves – 2 nos



Wash and pat dry the fish, apply salt and each side of the  fish and  steam each side 5 minutes


For preparing sauce


Heat oil in pan and add chopped onion, Garlic , green chilli and green onion white part and sauté well,
Add soy sauce, oyster sauce and jaggery syrub mix well and cook for 5 miniutes








For serving suggestion


Arrange the lettuce leaf on a plate pour half of the sauce and place the  steamed fish   And pour rest of the sauce over it.

Colorful Mini Pizza Dosa With Black Olives






COOKING WITH AN INGREDIENT – OLIVES


Olives or “Zaitoon” is a Quranic food, so let’s get creative about using it and cooking with it in some or the other way. 

I am linking this recipe to Rafeda's Bigsweettooth, monthly event Muslim food blogger Event.




Kids love to eat pizza we can prepare variety of pizza like bread pizza, Stove top tawa chappathi pizza, dosa batter pizza,cauliflower pizza.

Mini Pizza Dosa


Ingredients:

 Idly dosai batter - 1 cup
black olive – as required
chopped capsicum -  3 tbpsn
mozeralla cheese - 3 soup spoon full
grated carrot -  half cup
ketchup - as required



Method
Heat a  mini  pancake tawa  pour the dosa batter little bit thick.
sprinkle little butter spread/arrange the ,carrot, mozeralla cheese,   black olives, capsicum cook for one minute.
after a mintute Spread the ketchup
close with lid and allow to cook 2 mintutes.



Yummy colourful mini pizza dosa/pancake is ready to serve your kids
