Chapli Kabab




Iron - Mutton,coriender 
Preparation Time: 15 minutes plus Marinating time
Cooking Time : 20 minutes
Chapli Kabab is the Pakistanis famous Street food recipe.


  1. kheema – ¼ kg Goat- Mutton or Beef
  2. Chopped onion – 2 tbaspn
  3. Coarsely  ground coriander seeds – 1 tpsn
  4. Roasted and grinded cumin seeds – 1 tpsn
  5. Whole red chilli flakes – 1 tspn
  6. Ginger garlic paste – 1 tspn
  7. Tomato chopped – 1 tspn
  8. Pomegranate – 1 tbspn
  9. coriender leaves - few
  10. Salt – to taste
  11. Basan flour or corn flour for binding
  12. Required Oil for shallow fry
  13. Tomato roundly sliced – required qty







Method 
Wash and drain the water from kheema add all ingredients ( 1 to 11) expect sliced tomato and oil. Marinate half hour.
Prepare a  big ball and make it flat round shape and keep tomato sliced over the mutton and press it .
Heat oil in  a iron tawa ( or ) Non stick pan drop the flat kabab ‘s and cook both side well. we can eat with naan or thandoori roti.

Dill Leaves Falafel Sandwich with Kuboos and Samoon

Dill Leaves Falafel Sandwich

Generally accepted to have first been made in Egypt, falafel has become a dish eaten throughout the Middle East. The fritters are now found around the world as a replacement for meat and as a form of street food.
I am regularly preparing various ways like indian falafel,falafel, dil leaves falafel. It is my family's favourite.

For Falafel


INGREDIENTS:
Dill leaves – 1 bunch
White channa – 200 gms
Garlic – 3 nos
Cumin seeds – 1 tbspn
White sesame seeds – 11/2  +11/2 tbspn(roasted)
Baking powder – 1 pinch
Onion  - 1 no chopped
Green chilli – 1 big
Salt to taste
Oil – for deep fry
METHOD:
Soak the channa whole night, wash and chop the dil leaves finely,
Roast the cumin seeds separately.
In a mixie jar put the soaked channa, garlic, onion, dil leaves, salt, baking powder, green chilli, roasted cumin seeds, half of the roasted white sesame seeds then grind coarsely for 3/4th done.
In that grinded paste add the balance sesame seeds and mix it, make small balls from the mixture, make a plum size ball and gently press them and deep fry in hot oil until nice golden brown.
The crispy Dill leaves Falafel ready.


Dipping Sauce

mayonnaise - 3 tbspn
garlic - 1 pod
curd - 1 tbspn
olive oil 2 tspn
Blend everything in a blender.

For sandwich

need readymade kuboos or long bun (samoon)
cheese slices
lettuce
carrot and cucumber cut into match stick size

Serving suggestion

Take a bun or kuboos spread the dipping sauce on it. Arrange it into a sandwich form.

Mutter Dal Vadai - பட்டாணி பருப்பு வடை

Vadai is a South Indian snack. Usually we prepare it with chanadal. Instead of chana dal we can prepareit with mutter dal., Preparing with this dal it is morecrispier than chana dal. During Ramadan fasting time we make this as side dish for nonbu kanji. For more flavor add  mint leaves to this vadai it gives more health benefits. During pongal festival it prepared as side dish for sweet pongal and ven pongal worldwide.for a different variation, we can subsititute chick peas for channa dal to make these vadais.




Ingredients


  1. Mutter Dal ( pattaani paruppu) - 200 gram
  2. Ginger - 2 inch size
  3. Green Chili - 1 no
  4. Onion - 1 no
  5. clove - 1 no
  6. fennel seeds - 1/2 tspn
  7. salt - to taste
  8. curry leaves - few (10 leaves
  9. cinnamon Stick 1/4 inch size


Method

  1. Soak Mutter dhal for 1 hour and drain the water completely.
  2. Divide into 3 portions.
  3. Add saunf, cinnamon, clove , ginger,  with first portion of mutter dhal  and grind  to a fine paste. Set aside.
  4. Coarsely grind  the remaining soaked channa dhal .
  5. Mix  the dal paste,  coarsely ground mutter dal, onion, green chilles and curry leaves together  with a fork. 
  6. Make small  size balls and flatten it slightly with your finger.
  7. Heat oil in a pan and deep fry all them all to golden brown.  
  8.  Drain the excess oil and serve hot. 

Note: Instead of Mutter dal you can use Channa dal
Instead of ginger you can use whole red chilli.

Boiled Corn Cob With Oregano








Who will say no to this corn cob, everyone likes this corn cob, corn cob is worldwide street food.
We can get this corn cob in big shopping malls and pizza , kfc



Boiled Corn with Oregano 
Ingredients
Corn  - 2 nos (big)
Chilli powder  - ½ tspn
Salt  to – ½ tspn
Lemon juice  2 tspn
Oregano  - ½ tspn
Butter  - 2 tspn (or) Olive oil



Method
Boil the corn cob in a pressure cooker with little salt
Cut in to 8 pieces. In pan add the butter 
When butter melts add boiled corn cob, chilli pwd & salt toss well
Drizzle the oregano and lemon juice and mix well
Kids would love this corn cob and adults too.



Instead of oregano you can use thyme,basil or cilantro.
Instead of butter you can use olive oil.
Instead of chilli pwd you can use white pepper pwd or black pepper pwd.
You can cook this corn cob in the microwave or we can grill.

Misal Pav - SNC - 3


Misal Pav :                               Serves : 4 persons

Ingredients

Misal Pav is the popular street food in North India.

This month SNC  challenge is Misal Pav - a common street food in Mumbai 


Ingredients: 

Dried White peas – 150 grams (pattaani paruppu)



For the paste
Oil+ butter – 2 tspn
Chopped Onion – 2 nos
Chopped Tomato – 2 nos
Chopped Green Chilli – 1 no
Chopped Garlic – 2 pod
Chopped Ginger – ½ inch size
Grated Coconut  (Ready made) – 3 tbspn


Masala

Chilli pwd – ½ tspn
Coriander pwd – ½ tspn
Garam masala pwd – ½ tspn
Turmeric pwd – ¼ tspn
Dry mango pwd – ½ tspn


For Tempering

Butter + Oil – 2 tspn
Cumin seeds – ½ tspn


For serving & garnishing

Mix Farsan  (I used here  sev)
Coriander leaves
Chopped onion
Pav bun – 6 to 8  nos



Method

Wash and soak the dried peas (pattaan) over night or 8 hours . Drain water and add new water,pressure cook for 2 whistes.
 In a pan add 2 tspn oil + butter and chopped (ginger garlic,onion,tomato) and cook for 5 minutes
Add coconut and cook for 2 minutes. Let it cool and grind in a mixer fine paste.
 Heat a non stick pan and add oil + butter temper with cumin seeds, keep the low fire, add all the masala powders.stir well add needed quantity of water to get gravy consistency.
 Now add the ground paste and cook for 3 minutes.
Add the cooked peas and boil for 3 minutes. 

Transfer  the  peas gravy in to a bowl garnishing with coriander leaves,Chopped onion  and Sev.  Serve with butter fried pav bun.






Serving Suggestion:

Take the butter fried  bun. 

Place the peas gravy between the bun  and garnishing with coriander leaves,chopped onion and sev make a sandwich. 
It can be eaten as a breakfast or as an evening snack with hot Garam masala tea. 

In this is recipe I added the masalas are as per my taste.

Tangy Lemon Bhel Chat with lays chips







Bhel Puri is one of my favorite Snack.it is a  famous North Indian Street food chat recipe.  I prepared a simple and tangy lemon bhel with lays ships. I am sure that the  kids will love this chat.



Serves : 2
Ingredients

Lemon bhel   - ½ cup
Chopped Onion – 1 no
Chopped green chilli – 1 no
Boiled Potato cubed – 1 no
Lace Chips  -  1 packet
Roasted Peanut – 1 tbspn
Dates ,Tamarind chutney  - 3 tbspn
Mint ,Tamarind chutney – 3 tbspn
Mango powd – 2 pinch
Chat masala –  ¼ tspn






Method

In a large bowl Mix the above said ingredients, serve immediately with masala chai or any health drink.
 Chut Phat [ Quickly] Snack Is Ready To Eat ! 
The Amazing mouthwatering taste of bhel puri with  tangy sauces,Usually in Bhel Puri they use Papadi so Instead of papadi i have used lays chips.
