Three Types of Easy evening snacks

Cooking without fire
Recipe - 1

Grated Cabbage – 3 tbspn
Grated Carrot – 2 tbspn
Mayonnaise or Thousand island salad – 3 tbspn
Black pepper – one pinch
Salt – little
Lemon – ½ tspn
Sugar – ½ tspn
Milk – one tspn
Mix everything in a bowl except biscuit,
Place the filling into biscuit and serve.


Recipe - 2
Sweet Corn tin or boiled corn 100 gram
Butter – one tspn
Pepper salt – little
Chilli flakes – ¼ tspn
Oregano – ½ tspn

In a bowl mix all ingredients and serve



Recipe 3
Honey flavor nestle cream – small tin
Readymade fruit tin or any seasonal fruits (mango,apple,pineapple,banana, cherry)
Saffron
Honey

Chop all the fruits and mix with nestle cream drizzle with honey and saffron.

Moringka Leaves Poriyal




So many medicinal values in this Moringa leaves, it will increase your hemoglobin level, it is reduce your weight, intake your daily diet like juice or soup or curry


Ingredients

moringka leaves - 2 cups
grated coconut - 1 cup
for tempering
ghee - 1 tbspn
urad dal - half tspn
whole red chilli - 4 nos 
chopped onion - large 2 nos
cumin seeds - 1 tspn
crushed garlic pod - 6 nos
salt - to taste
cooked dal - moong dal or toor dal - 2 tbspn










Method

Clean , wash and drain the water from moringka leaves
heat a wide vessel . add ghee temper with whole red chilli garlic,urad dal saute 1 minutes add chopped onion saute well and cook till colour change now add moringa leaves, add salt cook for 5 minites .
Finally add grated coconut and cooked dal mix it well and cook 5 minutes.
 Remove from the heat transfer into serving bowl

We can bake a  cake  in a pressure cooker same like oven.
How to Make cake in Pressure cooker.
Ingredients

Coconut powder /Flour -  half cup
Baking powder – half tspn
Organic coconut oil – 3 tspn
Salt – I pinch
Dark chocolate – 1 tspn
Cinnamon powder – ½ tspn
Egg – 1 no
Milk or water or coffee – 1 tsbpn
Nuts (optional) walnut 1 no chopped
Honey – 1 tspn ( if you are in maintance diet add little organic honey)

Method
Beat egg and coconut oil together , melt the dark chocolate add it to beated egg
Mix all dry ingredients coconut flour, baking powder, salt and cinnamon powder sieve together and mix with little by little egg mixture. Add water or coffee or milk mix well. And transfer to backing dish or you can use paper cup or glass ware also.
Add salt in a cooker and heat the cooker (same like oven preheat) 10 to 15 minutes.
Place the cake mix inside the cooker and close the lid without (very important)cooker washer   and don’t put the cooker whistle, bake 20 minutes slow fire
Open the lid and check with tooth pick, to check it’s baked, if it comes out clean remove from the cup slice desire shape.
There is no difference taste is like same oven baked cake.
If you like any other flavor you can prepare same method.

Coconut Flour Bread

Nothing no difference same like normal Bread ,you can use like sandwich with Various fillings.




Paleo bread

Ingredients

Sieved coconut flour – 1 cup
Organic coconut oil – 2 tspn
Baking powder – ½ tspn
Salt – ½ pinch
Egg – 3 nos
Cinnamon powder – ¼ tspn
Almond powder – little (optional)
Nigella seeds or fennel seeds optional ( just an idea)






Method

Mix coconut flour, baking powder,cinnamon powder and beat the egg into fluffy texture and add coconut oil  mix well.
Set your oven 200 degree and preheat 20 minutes bake 25 to 30 minutes.
If your are following maintenance diet you can add almond or nuts powder.

Take one fresh coconut add enough water, grind the coconut,  extract the coconut milk  through a strainer or muslin(cotton) cloth, after extract the milk , don't discard the coconut wastes, this wastes are very use full flour for preparing  paleo diet meal or normal diet meal Like Biscuits,Cakes, pancake, cookies 


after extract the coconut milk through the  juice take that coconut flour and dry it in a cool place and grind it and sieve 



it will very use full for preparing diet recipes like coconut cup cake,bread,  coconut cake, coconut cookies and pancakes/

Greenish Laban


  
·         Gooseberry, also known as Amla,rich in vitamin c and high fiber and great summer cooler too.

·         Gooseberry Laban/Buttermilk is a delicious dish which is liked by the people of every age group

Ingredients

·         Laban/Butter milk – 250 ml
·         Ginger – one inch size
·         Goose berry – 1 no
·         Coriander and mint – ¼ cup chopped
·         Salt to taste
·         Ice cubes – 5 nos



Method

·         Wash and remove skin from ginger and remove seed from gooseberry.
·         Wash and chop coriander leaves and mint
·         In a blender add mint, coriander, gooseberry, ice cubes, ginger, laban and salt blend well .
·         Transfer the greenish laban in to cup or tall glass and serve immediately

Tomato Beet Rasam




Rasam is  south Indian side dish, It is very good for digestion. Usually rasam will prepare with tamarind, for a change we will prepare with tomato or any other fruits or vegetable here i added  beetroot,it will  be a great way of giving  kids to rasam as a healthy dish. And it will  suitable for paleo diet too.

Key Iron Ingredients: Tomato and Beetroot
Preparation Time : 7
cooking time : 13 minutes
serve 3 or 4


Ingredients


Ripe Tomato – 4 big
Grated Beetroot – 2 tbspn
Salt – to taste
Rasam podi home made – or readymade ( aachi or Sakthi)
Coriander leaves – few
Tamarind cube – 1 nos ( optional)
Turmeric powder – ¼ tspn
Chilli powder – ¼ tspn

For tempering

Ghee – 1 tspn
Mustard seeds – ¼ tspn
Curry leaves -  few
Garlic pod- 2 nos
Asofeotida – one pinch
Green chilli – 1 no

Method

In a pressure cooker or vessel add tomato, beetroot,turmaeric powder,curry leaves,coriander leaves and add 3 glasses of water cook well, if you are using cooker leave 3 to 4 whistle.
Remove from the cooker mash it well and strain the juice/rasam/soup and boil 5 minutes
Finally temper with listed above *for tempering* ingredients and pour it on rasam/ soup.
We can drink like soup. If you are in paleo diet take this soup/rasam with salad and fish or chicken fry It will complete your lunch or dinner.

Mango Coconut Milk Cocktail





How to Cook Mango Coconut Milk Cocktail

Mangoes are an excellent source of vitamins A and C, as well as a good source of potassium, and it contain beta carotene. Deliciously rich in anti- oxidants, potassium and fiber. - the mango is the perfect fruit Truly "The king of Fruit"



Mango Coconut Milk cocktail

Ingredients

Mango -  half of one
banana – half of one
chikoo(sapota)/ Mud Apples – one number
guava – half of one
honey – to taste
thick coconut milk – ½ cup (100 ml)
thin coconut milk – ½ cup (100 ml)
fresh milk – ¼ cup
ice cubes – 4 nos
tiger brand Mango essence

for garnishing

cashew nuts
raisins
mint leaves









Method


  1. Wash and remove skin and from mango , chikoo and banana fruit.
  2. Cut into small pieces.
  3. Grind separately guava fruit and thin coconut milk + fresh milk and strain it. Chill a tall glass on a freezer 10 to 15 minutes.
  4. Place all the Ingredients in a  blender– ( mango, chickoo,banana and strained guava juice and thick coconut milk) and blend for 30 seconds
  5. Transfer the cocktail into chilled glass.
  6.  garnishing with mint leaves, cashew and raisins. Serve immediately
  7. Flavorful yummy Mango and coconut milk cocktail .



Note : Instead of honey you can add sugar or brown sugar.
Instead of guava and chikoo (sapota)you can add fruits ,mango with kivi and papaya , taste all good

Strawberry cheese cake


Strawberry cheese cake 

For Base
Digestive Biscuits or Chocolate chip biscuit or any biscuits – 5 nos
Butter – 4 tspn
Oats – 2 tspn
Cheese Filling
yogurt – 200 gram
Paneer – 100 gram
Vanilla essence – 2 drops
Sugar – 6 tspn or sweetened condenced milk 3 soup spoon full
Agar agar (china grass) powder – 1 ½ tspn
Water – ¾ cup
Strawberry – 7 nos





 For glaze

Water – ½ cup
Sugar – 2 tspn
Roo ap sha essence – ½ tspn
Strawberry – 3 nos



Method
Place the yogurt in cheese (Muslin) cloth pour the the curd and tight it allow drain all the water to get half quantity of thick  yogurt
Powder the chocolate chip biscuits in a food processor & oats, melt the butter and mix with the biscuit & oats powder. Pour  this mixture into Small Round tin evenly and press tightly and set it in refrigerator for ½ hour.

 Add china grass powder  in a  3/4 cups water soak 10 minutes  and boil.  In a food processor add Strawberry paneer, hung curd, china grass, sugar or condensed milk blend well
Pour this batter over the biscuit crust and refrigerate it  for 2 hours.

For the glaze

Soak china grass powder and boil with ½ cup of water , grind strawberry coarsely and add, sugar, roo ap sha
And boil for  about 5 minutes, cool it in room temperature  and  spread this  glaze  over the cheese cake allow the cheese cake to set for  an hour.

Garnishing with pomegranates

Nowadays most of the people prepare cheese cake for parties.
“Cheese cake is a Japanese dessert”.

Instead of Baking in oven they prepare cheese cake to set in refrigerator, for this they use gelatin for the gripness.



Preparing cheese cake setting we are using gelatin, using with animal bone powder, some for vegetarians scared to add this gelatin.

Instead of gelatin we can use Agar agar in this cheese cake.
Agar agar is vegetarian food so without fear we can use this agar agar/china grass for your all dessert item.
In Islamic home we prepare in Ramadan time we often prepare agar agar jelly.
 Agar agar will set properly to our dish.


இப்போது செய்கின்ற பார்டி மெனுவில் அதிகமாக இடம்பெறுவது சீஸ் கேக் என்னும் ஜப்பான் நாட்டு டெசர்வகை.

பழங்கள் கலந்து கேக் போல ஓவனில் பேக் செய்யாமல் குளுரூட்டியில் வைத்து குளிர வைத்து செட் செய்வது இதில் அது குழைந்து விழாமல் கெட்டியாக கிரிப் கொடுக்க இதில் ஜெலட்டின் பவுடரை பயன் படுத்துகிறார்கள்.
 இதில்  அசைவ பொருட்கள் சேர்த்து செய்கிறார்கள் என தெரிய வருகிறது. எதிலிருந்து தயாரிக்கிறார்கள் நாம் சாப்பிடலாமா கூடாதா என்று சந்தேகப்படும் சைவ உணவு சாப்பிடுபவர்கள் ,
ஜெலட்டினுக்கு பதிலாக நோன்புகாலங்களில் நாங்க செய்யும் கடல் பாசி என்னும் அகர் அகரை பயன்படுத்தி செய்யலாம். இது உடல் நலத்திருக்கு மிகவும் நல்லதும் கூட எந்த செயற்கை பொருளும் கலந்து இருக்கிறதோ என்ற சந்தேகம் இல்லாமல் இதை பயன் படுத்தி செய்துகொள்ளலாம்.
உடல் நலத்துக்கு மிகவும் நல்லது குழந்தைகளுக்கும் பயமின்றி கொடுக்கலாம்.
ஜெலட்டின் சேர்த்து பயன் படுத்தும் ரெசிபிகளுக்குபதில் அகர் அகரை பயன் படுத்தலாம்.
