SNC August Month Challenge - 2013

SNC (south vs North) and (North vs South) Event Started by Divya Pramil   I am a part of south group. 


SNC – 11 (August 2013)
1.     Challenge for the Northern team  - Paasi Paruppu Payasam Hosted by Divya Pramil.

Due to my personal work I am unable to post last two months SNC challenge.

This month SNC Challenge is kulfi is my son’s favorite. Immediately I prepared for Iftar. He enjoyed much. Thanks Shruti and Divya.
This kulfi will keep cool during summer and also  at present for Ramadan Iftar also.





 Ingredients:
1 litre milk
1/2 tin condensed milk
1/2 cup sugar
1 1/2 tbsp cornflour
1/4 tsp cardamom powder
1/3 cup chopped pistachios
1/4 tsp saffron (kesar)
1/4 tsp rose water


Method:
  1. Dissolve cornflour in 1/2 cup milk and keep aside.
  2. In the meanwhile pour the remaining milk, condensed milk ,and sugar  into a heavy bottomed pan and bring it to a boil.
        

3.    Keep scraping the cream (malai) from the sides of the pan, this will give thick texture to the mixture.
Keep boiling on low flame it it reduces to 3/4 quantity.
      4.   Pour the cornflour mixture into the mixture. Mix well and keep stirring to avoid lumps formation

  1. Stir well until the mixture becomes thick.
  2. Add cardamom powder, saffron and chopped pistachios. 
  3. Remove from fire and allow it to cool. Add rose water. Mix well.



  1. Now pour the mixture into kulfi molds or Popsicle molds,cover with the lid and freeze for 3 to 4 hours.

  1. Remove from freezer, insert ice lolly sticks as handles and again freeze until firm.

  1. When the Kulfi is completely set, keep the mold under tap water for a second & then slowly pull out the kulfi and serve immediately.

Sweet Corn Mint Pulao





Sweet Corn Mint Pulao is flavorful and colorful dish, , easy to prepare. Kids would like this healthy Lunch box Recipe.


Ingredients

To dry roast and to grind to a masala powder:

Ø  Pepper corns - 1  tsp
Ø  Cumin seeds - 1 tsp
Ø  channa dal - 1 tsp

To grind: 

Ø  Chopped mint - three cup
Ø  Green chilli – 5 nos

tempering
Ø  Oil and butter - 2 tsbsp.
Ø  Bay leaf - 2 
Ø  Cinnamon stick - 1/2" 1 no
Ø  Finely chopped onion - 1 no
Ø  Garlic - 5 cloves
Ø  Curd – 1 tbspn
Ø  Corn – 100 gram

Ø  BasmatiRice - 600 gram
Ø  Salt

Method: 

1.     Soak rice for 20 minutes. Rinse and Drain.
2.     Roast and grind the masala powder ingredients.
3.     Grind mint and green chilli coarse paste.
4.     Heat a pressure pan. Add oil+ Bay leaves, cinnamon, chopped onion and garlic sauté for 2 to  3 minutes.
5.     Add ground masala power, ground mint & green chilli paste and sauté for 2 min.
6.     Add corn and curd saute for 2 min.

7.     Add 1: 1 ½ water to bring it to a boil. (4 ½ cup)
8.     Add rice and add salt to taste. 
9.     Cook for about two whistles
10.  Serve with mutton gravy, boiled egg or chicken pepper masala or pappad,pickle and chips.

Nannari Lemon Sharbath



Nannari Lemon Sharbath
This refreshing drink is a great thirst quencher. Suitable for this hot summer.



Ingredients
Water - 800 ml (4glasses)
Nannari essence – 3 soup spoon
Sugar – 8 tspn (to taste)
Lemon – 3 nos
Salt – 1pinch
For Garnishing
Mint leaves
Method
Squeeze the juice from lemon and mix it in water
Add sugar and salt mix well till dissolved the sugar and strain it.
Now add nannari essence and mint leaves
Refrigerate for 3 hours.
Pour the juice into chilled glass serve it immediately

Soji With Green Banana Bajji



Soji (Rava)With Green Banana Bajji
During Ramadan month i used to prepare varieties of bajjis for Ifthar. It is liked by children to adult.  
Everyone likes yummy snacks  for Ifthar. Easy prepare with in 20 minutes.
Bajjis  are the famous Indian snacks.   It is a popular selling item for the street side snack vendors.
We can make varieties of bajjis like  onion bajji, potato bajji,green banana bajji, bringal bajji, bread bajji,chicken bajji,egg bajji fish bajji,tomato, capsicum bajji.  
All bajji's are great for evening snacks and we can pack this for lunch for school going children.





Ingredients
Green Plantain (vazakkaay) - 1 no
besan flour - 3 soup spoon full
rice flour  - 1 soup spoon full
Soji (rava)   - 1 soup spoon full
Ginger garlic paste  -  1 tspn
Kashmiri red chilli powder – 1  tspn
salt - to taste
oil – ½  tspn
bicarbonate of soda - 1 pinch



Oil – for frying




Method

Peel the skin from green banana and cut into desire shape
Add little water and mix all the ingredients, except Vazakkay (Green Banana), to become a thick batter (like idli batter consistency). 
Heat oil over a medium flame.  Dip the Banana slices in the batter one by one and deep fry to golden brown. Crispy Green Banana bajji is ready serve with tomato ketchup or any chutney variety.
Adding soji makes the bajjis more crispy


Note:
Instead of g & g paste you can use fennel seed powder or Garlic powder
Instead of Soji & Corn flour you can add 
bajji batter with little maida & corn flour. Corn flour also makes the bajjis more crispy.
