Ramadan Noobu Kanji - Mutton Kheema Soup





Ramadan Noonbu Kanji – Ramadan Mutton kheema Soup


This porridge (kanji) is prepared everyday during the Ramadan season. 
 In the Islamic Tradition, during Ramadan's 30 days,  we  prepare many variety of kanji.. There are varieties of rice soup like (coconut milk rice soup, veg rice soup, oats veg chicken soup,mutton keema rice soup, chicken kheema rice soup,biriyani noobu kanji , tomato soup, cream of chicken soup,palak soup, etc....) among which one of them
 It is eaten with urad dal vadai, masala vadai, pakoda, bhajji, cutlet  or any other fried and crispy snacks. 


Broken (uncooked) Basmathi rice – 175 gram or ¾ glass
Moong Dhal – 25 gram
Methi (fenugreek)  seed – 2 tspn


Oil + ghee (or) dalda – 2 tbspn

Cinnamon – 1 inch size
Cardamom  - 1 
Clove – 2  
Onion – 1 big
Ginger garlic paste – 1 tbspn
coriander leaves& mint leaves – few
Tomato – 1 big
Mutton kheena – 100 gram
Grated carrot – 3 tbspn

Red chilli powder -  ½ tspn
Turmeric powder -  ¼ tspn
Salt – to taste

Green chilli – 1
Curd – 1 tbspn
Coconut milk powder -  tspn
Water – 8 glasses






Method

Wash and Soak rice, dhal, methi seeds for 20 minutes
Chop the onion and tomato
Wash the mutton kheema and drain it.
 In a vessel,  heat oil and temper the cinnamon, clove, cardamom. 
Add chopped onions and carrot.  stir for 2 min and close the lid and keep the flame low, leave for 5 min.
Add ginger garlic paste.   stir well and  keep in low flame. After the raw smell goes, add chopped coriander leaves and mint leaves and stir it for 1 min.

Add tomato and green chili,. then add red chili powder, turmeric powder, salt and curd.  stir well.
Cook on low flame for 10 min.
Mash the  masala and tomato well and keep on low flame.   cook for about 15 min.
Add water and let it boil. 






Add soaked broken rice and dhal.    Let it boil for 5 min.  close the cooker lid and keep the flame low. Leave for  2 whistles.  Let is cool. 
When pressure is  released,  Add coconut milk and mix well and boil for 5 minutes.





Ramadan Special Noonbu kanji – (Ramadan Rice Soup) is ready to serve with pakoda,bajji, or vadai.

Mutton Kheema Kabab /Ifthar Snacks



                                                 MUTTON KHEEMA KABAB





INGREDIENTS:


   Mutton kheema  (washed)- 1/4 kg
   Ginger and garlic paste - 1 tspn
   Garam masala powder - 1/2 tspn
   Red chilli powder 11/2 tspn
   Chilli powder - 1/4 tspn
   Turmeric powder - 1/4 tspn
   Salt to taste
   Onion - 2 big
   Oilve oil - 2 tspn
   Coriander leaves - 1/2  cup (chopped)
   Roasted dhall  powder - 1/4 cup
   Egg -1




   METHOD:
Squeeze the water from mutton kheema  add chilli powder, salt, turmeric powder, garam masala powder, , coriander leaves, green chilly, 
chopped onion grind coarsely  and   add beatened egg, roasted gram dhall powder to it and mix well. mix well and marinate for 1 hour.
 Now make desired shape kababs.
 Heat oil shallow fry the kababs in a tawa.
Alternatively, you can roast on a grill Or barbeque
 Kababs will be delicious to have with rice, roti ,non ,tandoori roti, parata, chapathies or     with kuboos or you can make it like sandwich.

Dates Chutney


 Dates has iron and other nutrients, which give lot of energy to the body. Raisins help to cure the cold symptoms. 



Ingredients

Dates – 8 
Black raisins – 15 
Tamarind paste – 1 tspn
Salt – 1 pinch
Jaggery – 1 inch piece
Chilli powder – ½ tspn
 Roasted Cumin powder - 1 tspn

Method

Remove the seeds from dates.
In a bowl,  add dates, raisins and  ¼ cup water . 
Cook  for 2 minutes in a microwave oven.
Let it cool.
Add rest of the ingredients and grind in a mixie/blender to a  fine paste.
Dates chutney is ready to serve. 

Note:   Dates Chutney goes very well  with samosa, bajji and  vadais.  
Kids will like the sweet chutney. You can use this as a jam to spread it on a bread slice to give it as a snack to the kids.   Dates has iron and other nutrients, which give lot of energy to the body. Raisins help to cure the cold symptoms.

Ajwain Chicken Lolly Pop

Children favouriute chicken lolly pop
 adding ajwain good flavoured. 




ஓமம் லாலிபாப் ஃப்ரை

Ingredients:


Chicken loli pop – 10 pieces
Kashmiri chilly powder – 1 tbspn
Salt – to taste
Paparika powder – ½ tspn
Ajwain powder– 1 tspn
Chopped coriander leaves  – 1 tbpsn
Corn flour powder – 1 tbspn
Rice power – 1 tspn
Basan powder – 1 tbspn
Ginger garlic paste – 1 tbspn
Curd – 1 tbsn
Lemon – ½ + ½
Olive oil – 1 tspn

Oil + butter – for deep fry

Method

1.Wash chicken 6 times and Put ½ lemon juice into the chicken soak 10 min.

2. Mix all the ingredients well ,make a paste, expect oil and chicken
now add the paste and oilve oil into chicken. Marinate for 3 hours in refrigerator.

3.Heat oil + butter keep the flame low fire and deep fry the marinated chicken.
Yummy yummy loli pop is ready.

All kids favorite Lolly pop chicken.


Chiken Loly PoP: Best Starters Meal For kids and Adults

- It is a great appetizer for all age groups.  My kids love them so much as I  make at least 15 different variations of these chicken lolly pops.



Serves : 5
Preparation time: 3 ½ hours
Cooking time : 25 minutes

Ingredients:

Frozen sadia loli pop chicken  - 11 pieces (900grams)

Lemon – 2
Kashmiri chilli powder – 1 tspn
Salt – 11/2 tspn (to taste)
Black Pepper powder – 1 tspn
Ginger garlic paste – 2 tspn
Corn flour powder – 2 tbspn
Rice powder – 1 tspn
Oil – 1 tspn
Soy sauce – 1 tspn

Oil – for deep fry

Method

Wash the lolly pop chicken and slit with a knife slightly in two or three places in the chicken so that the masala can get in well into the pieces.   Squeeze one lemon  soak  the chicken pieces in the lemon juice for 10 minutes.  Drain the liquid completely and set aside.
Add one lemon juice, salt, corn flour, and mix well.

Add black pepper powder, ginger garlic paste, kashmiri chilli, and oil mix well.
Marinate  the chicken in the fridge for 3 hours.
Heat oil in a pan and deep fry the marinated chicken over medium heat, until well cooked.
The kids will enjoy the  aromatic lollypop chicken fry very much.

KFC Lolly Pop




 It is a great appetizer for all age groups.  My kids love them so much as I  make at least 15 different variations of these chicken lolly pops.

To make chicken lolly pops,  buy only leg pieces, wings or wholelegs.

Chicken Leg pieces and one whole chicken (900 grams)
Onion – 1 big
Tomato – 1 big
Ginger  - 3 “ size
Garlic – 6 pods
Baking powder – 1 tspn
Salt to taste

For coating:

Maida  - 1 cup
Cornflour powder – ¼ cup
Chilli powder – 2 tspn
Salt – ½ tspn
Butter + oil – for frying

Wash the chicken pieces and slit them with a knife slightly in two or three places,  so that the masala can get in well into the pieces. 
Chop the onion and tomato.
Wash and peel the ginger and cut into small pieces.
Grind together ginger,garlic, onion,tomato.
Add chicken,baking powder,ground paste,200 ml water and marinate for 3 hours.
After marination,  drain the water or liquid completely.
Mix corn flour,Maida,chilli powder and salt.  
Coat the chicken pieces well in this mixture.
Heat oil + butter. keep the flame on low fire and deep fry the chicken pieces.


It goes very well with  dhal rice, chappathi, kuboos,  and  naan.
If you like it very spicy ,    add some more red chilli powder.
