Sweet Corn Mint Pulao





Sweet Corn Mint Pulao is flavorful and colorful dish, , easy to prepare. Kids would like this healthy Lunch box Recipe.


Ingredients

To dry roast and to grind to a masala powder:

Ø  Pepper corns - 1  tsp
Ø  Cumin seeds - 1 tsp
Ø  channa dal - 1 tsp

To grind: 

Ø  Chopped mint - three cup
Ø  Green chilli – 5 nos

tempering
Ø  Oil and butter - 2 tsbsp.
Ø  Bay leaf - 2 
Ø  Cinnamon stick - 1/2" 1 no
Ø  Finely chopped onion - 1 no
Ø  Garlic - 5 cloves
Ø  Curd – 1 tbspn
Ø  Corn – 100 gram

Ø  BasmatiRice - 600 gram
Ø  Salt

Method: 

1.     Soak rice for 20 minutes. Rinse and Drain.
2.     Roast and grind the masala powder ingredients.
3.     Grind mint and green chilli coarse paste.
4.     Heat a pressure pan. Add oil+ Bay leaves, cinnamon, chopped onion and garlic sauté for 2 to  3 minutes.
5.     Add ground masala power, ground mint & green chilli paste and sauté for 2 min.
6.     Add corn and curd saute for 2 min.

7.     Add 1: 1 ½ water to bring it to a boil. (4 ½ cup)
8.     Add rice and add salt to taste. 
9.     Cook for about two whistles
10.  Serve with mutton gravy, boiled egg or chicken pepper masala or pappad,pickle and chips.

Cucumber Walnut Chutney with Mint





This month magic mingle kalyani's two Ingredients are Cucumber and Walnut.

1.Cucumber Walnut Chutney with Mint

I always prepared this mint chutney in varies method




Ingredients
Cucumber – 2 nos
Walnut – 10
Green chilly – 2 nos
Mint leaves – 1 punch
Salt – ¼ tspn
Sugar – ¼ tspn
Lemon  - Juice of 1 lemon
Onion  (opstional)
Roasted Cumim seeds – ½ tspn

Method

Wash the mint leaves and peel the cucumber and chop.
Add rest of the ingredients and grind in a mixie/blender to a  fine paste.
Cucumber Walnut Min chutney is ready to serve.




It is very well goes with KuSka, ( குஸ்கா) => My recipe in samaiyalarai.com and all snack verities .This chutney is little bit watery in consistency,so if u want it little more thick,u can add either flax seed or coconut.

2. Cucumber walnut Chutney Sandwich


Ingredients

Butter Fried Bread Slices – 4 nos
Cucumber walnut Chutney – 4 tspn
Chopped  walnut – 2 nos
Chopped cucumber – 2 tbspn
Ketchup – 2 tspn

Method
Spread the chutney & ketch into butter fried bread slices
Place the chopped cucumber and walnut between the two bread slices prepare like a sandwith.

3. Cucumber Mint Chutney

Ingredients
Cucumber - 1 no
Mint Leaves - 1/2 cup
Green chilli - 4 (adjust to your taste)
Onion - 1
coriender pwd - 1/4 tspn
cumin - 1/4 tspn
ginger - small piece
salt -to taste
jaggery - 1/4 tspn

lemon juice - 1 tbspn

Method

Peel the cucumber skin and chop add rest of ingredients grind in a 
mixie /blender to a fine paste except lemon juice.finally add lemon juice and serve with bread Slices.

Palak Mint Paneer Curry


Palak Mint Paneer Curry
Greens like Spinach (Palak)mint,coriender,curryleaves  has more iron content
Palak and Mint leaves have many medicinal values





Magic mingle Kalyani's May 2012 , Main two Ingredients are Mint and Paneer nice combination. 
Ingredients

Palak – 1 bunch
Paneer – 100 grams
Onion 3
Tomato 2
Green chillies 2
Ginger – 2 inch size
Mint leaves – ¼ cup
Garlic – 3 nos
Salt – to taste
Red chilli ,coriander,turmeric,garam masala powders – each ¼ tspn

for  tempering

Butter+Oil - 2 tbspn
Cumin seeds - 1 tspn

Method

Heat a large pan. Add oil and   Onion,ginger, garlic, tomato, green chilli palak and Mint cook for  5 minutes.
Let it cool. 
Grind the mixer in a blender (mixer) to a fine paste.
In separate pan, heat the oil +butter and add cumin seeds fry for ½ a minute.
Add the ground paste . 
Add the paneer cubes directly.
(if you want fry the paneer in oil or butter)
Let it boil for 5 minutes.
Serve it with chappathi ,kuboos, Ghee rice or dosai.You can have this curry with bread also.


This curry is very healthy for all, especially for the children and for the pregnant women. 
All kids favorite is  pane er

Mint Masala Vadai


Mint Masala Vadai:  

Masala vadai is one of the favorite snacks of my mother and my son.  It goes very well with uppuma or pongal.  During Ramalan fasting time,  we make this vadais and nombu kanji. Adding mint to the masala vadai,  gives more health benefits. 
 For a different variation,  we can substitute chick peas for channa dal to make these vadais. 

 Ingredients

Channa Dal (kadalai paruppu)   - 200 gram
Puthina (Mint leaves) – 1 cup (chopped)
Ginger – 1 inch size
Green chillies – 2 
Garlic – 3 pods
Onion -  1  (chopped)
Clove – 1 
Cinnamon – ½ inch size
Saunf (fennel seeds) – ½ tspn
Salt – to taste
Curry leaves – few
Whole red chillies – 2 


Method 

Soak channa dhal for 1 hour and drain the water completely.
Divide into 3 portions.
Add saunf, cinnamon, clove , ginger, garlic and  whole red chillies with first portion of channa dhal  and grind  to a fine paste. Set aside.
Coarsely grind  the remaining soaked channa dhal .
 Mix  the dal paste,  coarsely ground channa dal, chopped pudina, onion, green chilles and curry leaves together  with a fork. 
Make small  size balls and flatten it slightly with your finger.
Heat oil in a pan and deep fry all them all to golden brown.  
 Drain the excess oil and serve hot.

Mint Pulao







Mint Pulao: 


Ingredients


Basmati rice  - 200 grams


To dry  roast and  to grind to a masala powder:
pepper corns - 1  tsp
cumin seed  - 1 tsp
channa dal - 1 tsp
urad dal -  1 tsp
bay leaf - 2 
cinnamon stick -  1/2" 1 no

To saute in oil and to grind: 
butter (or) ghee  - 1 tsp
chopped mint - one cup
onion - 1 medium size
garlic - 4 cloves

Tempring

oil and butter - 1 tsp. each.
few curry leaves
finely chopped onion - 1 tablespoon 

Method:  

     Soak rice for 20 minutes. Rinse and Drain.

2.  Saute in oil and grind the masala paste. Mix the masala powder to the masala paste.
3.  Heat a pressure pan. 
Add oil+ butter and curry leaves,  chopped onion and saute for  2 minutes.
4.  Add ground masala power,   mint & masala powder and saute for 2 min.
5.Add  1: 11/2  water to bring it to a boil.
6. Add rice and add salt to taste. 
7. Cook for about two whistles. 
8. Serve with mutton gravy or chicken pepper masala.

Watnut dates mint chutney


The walnut is very good for brain  growth and development.   Walnut’s shape looks like a brain


Ingredients
Walnut – 4
Dates – 100 grams
Mint leaves – 1 bunch
Ginger – 1 inch size
Red chilly powder - ½ teaspoon
Roasted and powdered cumin - 1 teaspoon
Vinegar – ½ teaspoon
Salt – ¼ teaspoon


Method:
Soak walnut and remove the skin
Soak dates in the hot water and remove the seeds.
Wash mint leaves.
Grind ginger, cumin powder, and chilly powder in a blender/ mixie.


Then add dates, walnut, mint, salt and grind to a smooth paste.
Finally add vinegar and mix well.
Yummy nutty dates mint chutney is ready to serve.


Tips

The walnut is very good for brain  growth and development.   Walnut’s shape looks like a brain. You can use this chutney like jam. Its is very good for growing children. Dates have more iron. In Ramadan season,   this chutney goes well with all snacks items. It is very healthy for pregnant women. If you like you can add little badam and pista also.
