Street Food Burmese Special Egg Bejo by Jaleelakamal


A beloved Burmese street snack where boiled eggs meet crunchy peanuts, fried aromatics, and tangy tamarind. Minimal effort, maximum flavor.












A beloved Burmese street snack where boiled eggs meet crunchy peanuts, fried aromatics, and tangy tamarind. Minimal effort, maximum flavor.


Ingredients

  • Eggs: 4 large (approx. 200g)

  • Tamarind (seedless): 1 tbsp (15g)

  • Warm Water (for tamarind): ½ cup (120ml)

  • Water: 2 tbsp (30ml)

  • Salt: ⅛ tsp

  • For the Toppings / Stuffing

    • Roasted Peanuts: 2 tbsp (20g), coarsely crushed

    • Fried Onion: 1½ tbsp (15g)

    • Fried Garlic: 1 tbsp (10g)

    • Fresh Coriander Leaves: 1½ tbsp (7g), finely chopped


Method

1. Boil and Prepare the Eggs

  1. Boil the eggs until hard-boiled.

  2. Peel and slice each egg partially for stuffing.

  3. Arrange the egg on a serving plate.

2. Prepare the Tamarind Water

  1. Soak 1 tbsp (15g) tamarind in ½ cup (120ml) warm water for 10–15 minutes.

  2. Squeeze well to extract the pulp and strain to remove fibers and seeds.

  3. Keep the tamarind water aside.

3. Fried Onion

  1. Thinly slice ½ small onion.

  2. Fry in hot oil on medium heat until golden and crisp.

  3. Drain on a kitchen towel and let cool.

4. Fried Garlic

  1. Thinly slice 4–5 garlic cloves.

  2. Fry on low heat until lightly golden and crisp.

  3. Remove immediately to avoid burning.

5. Roasted Peanuts

  1. Dry roast peanuts on low heat until crunchy.

  2. Cool and crush coarsely.

6. Prepare Salt Water

  • Mix ⅛ tsp salt with 2 tbsp (30ml) water until dissolved.

7. Assemble the Egg Bejo

  1. Stuff each egg half layer by layer with:

    • Roasted peanuts

    • Fried onion

    • Fried garlic

    • Chopped coriander leaves

  2. Drizzle salt water first, followed by soaked tamarind water over each egg.


Serving Note

Serve immediately for the best crunch and fresh, tangy flavor—just like street-style Egg Bejo.

Fire less cooking



Goji berries are very rich in Iron, Strengthens Bone and improve eyesight.
Dates has iron and other nutrients, which give lot of energy to the body.

Ingredients


  • Ripe date - 3 nos big size
  • white seasame seeds - 2 tbspn
  • Roasted peanut - 2 tbspn
  • sunflower seed - 1 tbspn
  • Goji berries - 2 tspn
  • dry coconut - 3 tbspn



Remove the seed from dates, crush the peanuts, and add ingredients in a plate mix it well and prepare small balls.Very healthy bar .  When we are hungry we can eat this ball and very useful when travelling.

 “Afelia’s Kitchen“. Bangladesh food.I was chosen Guror Handesh Bangladesh Tradition recipe.










Guror Handesh is Bangladheshi Tradtional Recipe this is similar to our South Indian Appam.

Rice Flour - 1/2 cup
maida (plain flour) - 1/4 cup
jaggery (gur) - 1/4 cup
sugar - 1 tbspn
water - 1/2 cup or required amt




Method

Add little water to jaggery make a syrup and strain it.
Mix everything in a bowl Maida,rice flour,jaggery syrup,sugar mix  dosa batter consistency  without lumps close the lid and keep of 4 to 5 hours. (I did after half hour) Heat a oil in a pan pour batter one soup spoon full after few second flip the handesh and cook both side, it will come good golden colour remove from the oil Transfer gur handesh to serving plate.Yummy Bangladeshi Tradtional Sweet is Ready to eat with juice or coffee.

Three Types of Easy evening snacks

Cooking without fire
Recipe - 1

Grated Cabbage – 3 tbspn
Grated Carrot – 2 tbspn
Mayonnaise or Thousand island salad – 3 tbspn
Black pepper – one pinch
Salt – little
Lemon – ½ tspn
Sugar – ½ tspn
Milk – one tspn
Mix everything in a bowl except biscuit,
Place the filling into biscuit and serve.


Recipe - 2
Sweet Corn tin or boiled corn 100 gram
Butter – one tspn
Pepper salt – little
Chilli flakes – ¼ tspn
Oregano – ½ tspn

In a bowl mix all ingredients and serve



Recipe 3
Honey flavor nestle cream – small tin
Readymade fruit tin or any seasonal fruits (mango,apple,pineapple,banana, cherry)
Saffron
Honey

Chop all the fruits and mix with nestle cream drizzle with honey and saffron.

Ingredients
Urad dal – ½ cup 100 gram
Salt – ¼ tspn
Ginger – small piece chopped
Green chilli – 1 no chopped
Olive oil – ½ tspn

For tempering curd

Curd – one cup
Milk – little
Oil - - ½ tspn
Mustard – ½ tspn
Curry leaves – few
Hing – one pinch
Laban – required qty

For garnishing

Colourful bhoondhi
Roasted peanuts
Roasted cashew
grated Carrot –  required qty












1. To prepare the Urad dhal batter:

Soak urad dal in the icy cold water (to get more batter)  for 1 hour. 
 Drain the water completely .
Add salt ,green chilli ,ginger, curry leaves , olive oil and grind to a smooth paste.


 Mix well with fork and keep it aside.




2. To prepare  for the Urad vadai:

 Heat the oil for deep frying in a wok.  

Take little bit of the batter to make it to a small round shape  and flatten it slightly. Make a hole in the middle of the flattened batter, with your finger.   Deep fry them well.  Do not burn them.   Remove from the oil drain the excess oil well from the vadais.  Dip it in a labon and keep separate in a plate.






3. To Prepare Curd Vada



In a curd add little milk and beat well and temper with above given under temper list and add curd soak all the vadas  and transfer to serving plate and garnishing with cashew peanuts carrot.






Jaleela’s tips:This thayir (curd) vada for kids so will grind all together with urad dal, if it is for adult just chop and add .
Adding olive oil without sticking batter will grind very smoothly.
 It is very good for summer and also suitable recipe for Ramdan iftar comfort filling food for kids

Boiled Quail Egg Fry



Key Iron Ingredients: Quail Egg
Preparation Time: 5 minutes
cooking time  14 minutes
Type of Dish: Breakfast, Snacks 
serves : 3 or 4
Quail eggs are a rich source of iron.
Boiled Quail Egg Fry 

Ingredients:

eggs – 12 nos

for masala:

red chilli powder – ½  tspn
coarsely ground black pepper powder – ½  tspn
coarsely ground cumin powder – ½ tspn
salt -  (to taste) ¾  tspn 

oil - for frying
butter (or) ghee (or) gingelly oil  - 1/2 tspn





Method

Place eggs in a pot and add 1/2  tspn. salt.  Pour water to  3/4 of  the pot  and boil them for 10 minutes.  Transfer the eggs into cold water.  Remove the eggshells carefully. 
Heat a non stick pan.   Add oil + butter.   Add all chilli powder,pepper powder, cumin powder and salt saute ½ minute immediately add the quail eggs and fry over low heat,   until they become golden brown.  (about 2 to 3 minutes on each side) 

Note:  while frying the eggs, close the pan with the lid, as it may burst up.  You can also make a bread sandwich with these fried eggs.   For a different variation, to serve it as a snack for the kids.Best paleo breakfast.Rich Iron Recipe.
