Healthy Diet Ragi Beet Dosa/Pancake






Ragi Know as in Tamil kezhvaragu ,(Finger Millet)
Ragi (Finger millet ) is healthy millet powder for all age groups.
Ragi has high nutritional contents especially calcium and iron.


Healthy Diet Ragi Beet Dosa & Mint Chutney
Ingredients
Ragi powder – 100 gram
Rice powder – 1 tabls spoon
Rava ( soji) 1 tspn
Grated beetroot – 3 table spoon
Salt – to taste
Water – required qty
Chopped onion – 2 tablespoon
Chopped coriander leaves – few
Chopped green chilli – 1 no
Gingelly oil or olive oil – required qty
Method
In a bowl add ragi Flour, rice flour, ravai (soji),grated beet,chopped green chilli,salt,chopped onion and chopped coriander leaves add water little by little dosa batter consistency and sit for 10 minutes.
Heat non stick dosa pan pour the mixed ragi batter spread thin dosa sprinkle gingelly oil or olive oil cook both side well and remove from the heat. Cook rest of  all batter .

It’s goes very will Mint chutney or Idli podi

Mix Millet Mini Green Adai/Pancake



Home made powder pack healthy mini mix millet green pancake/adai 
Iron Ingredients : Curry leaves and palak, Lentil
Preparation Time: 15 minutes + soaking time 1 hour
cooking time: 20 minutes
serves 3
Ingredients

1.     Bengal gram /Lentil (kadala paruppu) – ½ cup
2.     Barnyard millet – ¼ cup
3.     Saamai – ¼ cup
4.     Thinai – ¼ cup
5.     green chilli – 1 nos
6.     ginger – small piece
7.     curry leaves – ½ bunch
8.     palak - ½ bunch
9.     Salt – to taste
10. Curry leaves – few
11. Gingelly oil & ghee – required qty
How to make Mix Millet Mini green Adai/Pancake


  1. Wash and Soak millets separate ,channa dal separate for one hour. Clean , wash and chop spinach and curry leaves.
  2. In a mixie first add channa dal grind it in a coarse paste. Remove from the mixie
  3. add chopped curry leaves , spinach , ginger, green chilli , salt and millets add little water and grind well and add ground channa dal and mix well
  4. Heat mini pancake pan spread gingelly oil plus ghee pour the batter and cook and flip it and spread the oil again prepare crispy adai.

Turmeric Root Dosa - Manjal Dosa



Colourful Medicated Turmeric root Dosa.

Ingredients
Crispy Turmeric Root Dosa

Ingredients
Raw rice 1 ½   cup
Idli rice – ½  cups
urad dal – ½ cup
methi seeds/fenugreek seeds 1/2 tspn
grated fresh  turmeric root – 1 inch piece
Salt to taste


gingly oil or ghee - required qty

Method 



1.  Wash and soak rice and dal separately. Soak the fenugreek seeds along with urad dal. Let this soak for 3 hours. 
2.  Drain the water from urad dal and methi seeds grind smooth batter and remove the batter to a clean bowl
3.  Now drain the water from rice and turmeric root and grind smooth batter.
4.  Remove the rice batter and mix both batter together
5.  Let the batter sit overnight or at least 6-8 hours to ferment. Add salt to the batter and mix well. Heat a flat tava/dosa pan,
6.  Rub with litter onion and oil pour a ladle of batter in the center of tawa and spread it slowly thin big circle, drop the gingely oil or ghee around the dosa let it cook medium flame till  it becomes golden brown ( top portion should cook completely) fold half to dosa and remove from pan. Serve with your choice of side dish.

Note :In this dosa priya used idli rice , i used here both raw rice and idli rice.

Indian Flag Mini Dosa


Tri colour Indian Flag Mini Dosa


Always I love to prepare our Indian Flag Recipe.For this dosa we need Red chutney and Green chutney of any flavour.

Ingredients

Dosa Batter - Required Qty



Carrot Tomato Chutney


For roast and grinding

oil - 1/2 tspn
curry leaves pwd - 1/2 tspn
musturd seed - 1/4 tspn
Ripe Tomato – 3 large
Carrot - 1 no
whole red chilli  - 2 nos
chilli pwd - 1/4 tspn
Garlic -  2 nos
grated coconut - 2 tbspn
Salt – to taste

for tempering

Gingelly Oil – ½ tspn
Mustard seeds – ½ tspn
Curry leaves - few

Method

Roast all above given ingredients and cool then grind in a mixie
(do not add water) ground well.
 In a pan, heat the oil temper with mustard seeds  & curry leaves.
Add ground tomato carrot mix and cook for 5 minutes till the water absorb.

Palak pesto /Dip/Chutney

palak - 1 cup
salt - to taste
green chilli - 2 nos
garlic - 1
walnut - 5
sugar - one pinch

 Method

Wash palak leaves and boil for 5 minutes along with salt , sugar sodium bi carbonate , transfer palak into cold water strain it and grind with green chilli , garlic required salt and walnut.

Now divide the dosa batter into 3 parts


for green: add one part to green chutney/palak pesto
for white : no need any chutney or dips
for red : add tomato carrot chutney dip
with these batter we are going to make a mini colourful dosa(Mini Pancake)
We can prepare like omelette type dosa also.


In a tawa pour red then pour white batter around it, followed by green batter in the same way. Spread ghee or butter and cook both sides serve hot.
This is a healthy colourful kids lunch box recipe.

Eggless Chocolate Pancake with Orange Syrup - SFC Jan-2015

You can make Pancakes for breakfast or for parties.  Kids love to eat these colorful pancakes. I always  prepare this with different flavors, Coconut milk pancake, Yellow Pumpkin Pancake, Nutella  with Banana Pancake.  ,Mini Egg Pancake ,Banana pancake,pineapple pancake,pomegranate pancaketutti fruity pancake, raisins pancake etc , ....  Most of my recipes are kids delight only.

Here for SFC Jan 2015 The recipes are Basundi and Eggless Chocolate Pancake. I love to cook pancakes. So I prepared this Orange flavour Chocolate pancake.

For Eggless Chocolate Pancakes
Ingredients:

All Purpose Flour - 50 gram
Chocolate bar - 3
Baking Powder -  1/4 tspn
brown Sugar - 2tbsn
Pineapple Essence - 2 drops
 Milk  or water 
3 Tbsp. Oil + butter

For Orange Glaze

vegetarian  gelatin - 1/4 tspn
Fresh Orange Juice - 1/2 cup
brown Sugar - 1 tbspn

Method
For Orange Glazed

soak gelatin in a hot water, combine orange juice , gelatin, brown sugar together in a small vessel and cook on medium flame till to maple syrup consistency. Keep aside and let it cool.



For Eggless Chocolate Pancakes
Sieve the flour,  and baking powder together in separate bowl. Melt the chocolate bar in double boiler and add it to pancake batter mix well with our lumps.

Heat the non-stick griddle and drizzle little  oil + butter Pour ladle full batter and cook till to bubble appears. Don't spread the batter like chilas or dosas to make soft and fluffy pancakes.

Notes: you can use coco powder instead of chocolate bar.
You can add wheat flour too instant of using all purpose flour.
Non vegetarians can use egg  and instead of water you can use milk.
For garnishing, you can use chocolate syrup, maple syrup, dates syrup  or fresh fruits and honey also.

Mini Egg Pancake







 
All purpose flour (Maida) - 100 grams
eggs - 2 
salt - 1 pinch
sugar - 75 grams
Oil + Butter - required qty






Method

Mix the ingredients (except oil+ butter,) .   Add water and milk and  blend well  in a mixer (blender)  to a  thick batter.  You can also mix well with a fork or a whisk to make a thick batter.  Make sure that there are no lumps. 
Heat a non stick pan.   Pour a  small soup spoon full of   batter in a pan and  spread to have  a thick small pancake.  Cook on low heat.
   Add little oil + butter .   Carefully, flip or turn over the pancake and cook the other side on low heat to golden brown.  Make sure that it does not get burned. 
Enjoy.
Serves : 2 kids or ( 1 adult)
 This egg pancake is very perfect for kids lunch box and easy tiffin too

Yellow Pumpkin Pancake with Cinnamon



We can make Pancakes for breakfast or for parties.  Kids love to eat these colorful pancakes like Banana Pancake, egg pancake, pineapple pancake, Tutti fruity pancake, coconut pancake, Onion pancake, carrot pancake, veg pancake.Grape Fruit Pancake,Urad Dal Pancake,Brown Rice Banana Pancake. Pancake is our family favorite Breakfast.
I tried this pumpkin pancake .  It came out very well .

Serves : 3
Preparation Time: 8 Minutes
Cooking Time: 20 Minutes

Ingredients

Whole wheat Flour - 250 gram
Grated pumpkin - 100 gram
Egg – 2 
Cinnamon – ½ tspn
Baking powder – ½ tspn
Salt – ½ tspn
Powdered Sugar – 100 gram
Cardamom pwd – ¼ tspn
Dry ginger pwd – ½ tspn
Method
How to make Pancake?

In a mixie or blender add pumpkin, little water or milk and grind to a  smooth paste.   beat the egg to a fluffy texture and add it to the  pumpkin puree. 


Mix all the dry ingredients together and add egg and pumpkin mix well
Add required amount of water and mix well to a  thick batter.
Make sure that there are no lumps.


Heat a non stick pan.   Pour a small ladle full of batter and spread to have a small thick pancake.
   Cook on low heat.   Add little oil or butter.  



 Carefully, flip or turn over the pancake and cook the other side on low heat to golden brown.  Make sure that it does not get burnt 









Garnish it  with pista flakes
Enjoy.
