Carrot & Raisins Mug Cake (Eggless)




Carrot and Raisins Mug Cake: Serves – 1 Child


Preparation Time: 7 min
Cooking time: 4 min
One More Recipe for  Magic mingle kalyani's Carrot and Raisins ,

Ingredients


All purpose flour (maida) –   11/2  tbpsn
Sweetened condensed Milk – 1 tbspn
Sugar – 2 tbspn
Butter – 1 tbpsn
Baking powder – ¼  tspn
Bicarbonate of soda – ¼ tspn
Milk – 1 tbpsn

grated Carrot – 1 ½ tbspn
Raisins Black & Yellow – each 8
Strawberry chopped – 1 tspn
Pista flakes – 1 tspn

Method

1.       Sieve the flour, baking powder and bicarbonate of soda.
2.       In a bowl, beat sugar and butter to a creamy texture.
3.       Add the flour mix, condensed milk, one by one and mix gently  without  lumps.
4.       Add Strawberry, Pista flakes, Carrot and raisins mix well
5.       Transfer to a microwave oven safe mug and set 3 minutes to bake the mix.
6.        Let it cool & Enjoy.

Mango and Raw Mango Thokku



Mango and raw mango thokku:

Sour Raw Mango – 1 
Sour  Mango (fruit) – 2 

Methi seed (Fenugreek)   ½ tspn (dry roasted and powdered)
Red chili powder – 1 tbspn
Jaggery – 1 tbpsn
Salt – ½  tspn (or as needed ) 

For  tempering:

Gingelly  oil  (also known as Sesame oil)  - 3 tbspn
Mustard seed – ½ tspn
Hing (asafoetida)– 2 pinches

Method

Peel off the skin from the mangoes and remove the seeds from them. 

Grate the two mangoes.

Heat  oil in a pan and temper the above-said ingredients for tempering.

Add the grated mangoes.

Add salt, chili powder and   methi powder.

stir well  until  mangoes are cooked and can be mashed well. 

Add jaggery and  stir well.  

Cook for 5 minutes and remove from the heat.

Allow it to cool and store in an air-tight  pickle jar or container.

Mouth-watering mango thokku is ready . 

Pregnant women love the  flavor of this thokku.

Raisins Carrot cooler/Red Cocktail Cooler/Raisins,carrot,beetroot Cooler

The health benefits of raisins include relief from constipation, acidosis, anemia, and fever.  Raisins also help in weight gain, eye care, and dental care. It is a high energy low fat snack too. Very Healthy Ingredients 
This refreshing drink is a great thirst quencher. Suitable for this hot summer.
 Carrots have many nutritional values.   It is a healthy habit to eat one raw carrot, everyday. 

Raisins and carrot cooler:  


Ingredients


Grated Carrot – 1 (big one) 

Grated Beetroot – ½ piece of 1

Black & yellow raisins –  20  each

glucose  – needed qty

Water

Ice cubes












Method


Soak the raisins in water over night or for at least 8 hours.

In a blender (mixie), add all the above-said ingredients and blend well.

Strain the juice in a muslin cloth.

Transfer the juice into a big serving glass.

Enjoy.


It is a healthy drink for pregnant women, anemic people and cancer patients. 

Kids love this drink. 










2. Raisins Juice -  (for Babies)


Ingredients


Raisins black & yellow – 20

Water – ½ cup

Glucose – needed qty


 Method


Soak raisins  over night

Squeeze the juice from the raisins, using your hand.

Strain them  and mix them with  glucose well.


Raisins juice cures the constipation problem among babies.  You can start feeding the babies with this juice from their sixth month.

Watermelon Fingers (for babies)


    Watermelon Fingers
Serves : 2

Water melon – Half cup (one big slice)(cut finger size, seeds removed)


for dressing
Salt – 1 pinch
Glucose  – 1 tspn
Dry ginger powder  (sukku podi) - 1 pinch



Method


Cut the watermelon Remove skin and seed 
Cut finger size pieces.
And sprinkle the salt ,Glucose, dry ginger powder.
Serve to your baby.

Potato finger fry


  Healthy Home made  Potato finger fry

Serves: 2 Babies

Ingredients

Potato – 1 medium
Salt
Pepper
Butter
ketchup

Method

Cut the potato  lenghwise - like finger size pieces.
Boil the potato in a microvewave-safe bowl  for 5 minutes with little water.
Drain the  water completely.
In a pan,  add littler butter and  roast the potato pieces.
Add pepper ,salt, ketchup and mix it well.
Potato finger fry is ready to serve .
Definitely your baby will enjoy.

Katti miti Cucumber salad & Sweet Cucumber salad


   1.    Katti miti Cucumber salad

Serves: 1 

Cucumber – 1 
Sugar – ½ tspn
Salt – ½ pinch
Lemon – ¼ tspn
Pepper – ¼ tspn

Method

Cut the two edges of cucumber and peel the skin.
Slice into  round shapes
Now sprinkle the salt, sugar, lemon, and pepper.
Ready to serve.







2 - Cucumber Sweet salad - Serves - 2

Ingredients

Cucumber – 2 no
Sugar – 2 tspn

Method

Wash and remove the skin from cucumber.
Slice the cucumber into thin round shape.
Sprinkle the sugar and serve.
Quick salad for kids,  very simple and easy .I like this salad very much since my childhood, now even its my son's favourite.

Spinach (Palak) Chicken






Generally greens like Palak (Spinach) are very healthy for all. Palak has more iron content.  It is especially good for kids, anemic people , pregnant women and elderly  people.




Palak (Spinach) Chicken Gravy

Boneless chicken - 250 grams
Fresh palak  (Spinach)  - 1 bunch
Onion - 2 
Ginger garlic paste – 1 ½  tspn
Red chilli powder -   1 tspn
coriander powder – 1 tspn
turmeric powder  - ¼ tspn
garam masala        – ¼   tspn ( cinnamon, clove, cardamom)
 tomato - 1 pureed
Curd - 1 tbspn
Salt to taste
Oil + butter – 2 tbspn

Method

Wash and cut the chicken into bite size pieces.
Wash the palak and grind in a mixer.


Heat a pan.  add oil+ butter, ginger garlic paste fry for 30 seconds.
Add the  chopped onion, coriander leaves  and sauté for 2 minutes.

Add the  boneless chicken pieces, red chilli powder, coriander powder, turmeric powder and  salt stir well .

 Add the  ground tomato puree and  curd (yogurt)  and  cook for 5minutes. 


Add ground palak and stir well . cook for 5 minutes.

Sprinkle the garam masala powder and sauté for 2 minutes and remove from the stove.

This Spinach chicken curry  goes well  with ghee rice,  chappathi,  or kuboos.  
This curry is a healthy dish.

Potato Wedges Fry






Boiled   Potato Wedges  Fry
Serves: 2 Babies

Ingredients

Potato – 1 medium
Salt
Pepper
Butter

Method

Cut the potato  into six to seven pieces.
Boil the potato in a microvewave-safe bowl  for 7 minutes with little water.
Drain the  water completely.
In a pan,  add littler butter and  roast the potato pieces.
Potato wedges fry is ready to serve with ketchup.

Coriander Peas Rice




One of my Tamil Blog friend kovaitothili's recipe I changed little bit to my taste.


Ingredients


Rice - 200 grams
Coriander (cilantro)- 1 punch
whole red chilies - 4 nos
Cumin seeds - 1 tspn
Tamarind - half gooseberry size
Salt - to taste
Oil - 2 tspn
Peas - 25 grams

For tempering

Mustard seed - 1/2 tspn
channa dal - 1 tpsn
urad dal - 1 tspn
hing - 1 pinch
curry leaves - few 
garlic - 2 pods

 Method

Wash rice and soak for 10 min.

Wash the coriander leaves and drain well.

Grind the coriander leaves, tamarind, and whole red chili in a blender.
In pressure cooker temper the above said ingredients
Add peas, and ground paste stir well for 2 min
Add soaked rice and add enough water (1:1 1/2.) 300ml ,close the lid and leave for two  to three whistles.
When pressure is released, open the lid carefully mix well with a fork and serve it hot.
Amazing aromatic  flavorful coriander rice is ready.

Urad Dal Vadai


Urad dal vadai ,ulunthu vadai  is most popular south Indian dish


For Making urad dhal vadai:

Urad dal – 150 grams
Chopped Ginger – 1 tbspn
Chopped green chilli – 2 nos
Chopped onion – 2 medium size
Salt – to taste
Curry leaves - 10 nos
Bicarbonate of soda – 1 pinch

oil – for frying

Soak urad dal in the icy cold water (to get more batter)  for 1 hour. 
 Drain the water completely .
Add Bicarbonate of soda,and salt  and grind to a smooth paste.
Add chopped onion, ginger,green chilli, and curry leaves.  Mix well with fork and 
 Heat the oil for deep frying in a wok.  
Take little bit of the batter to make it to a  round shape  and flatten it slightly. Make a  hole in the middle of the flattened batter,  with your finger.   Deep fry them well.  Do not burn them.   Remove from the oil and drain the excess oil well from the vadais.  Serve it hot with Mint chutney.

Chickpeas melon salad (for babies)


.    Channa melon salad
Serves : 2


White Channa (chick peas)  – 25 grams
Sweet melon – ¼ cup (  cut bite size)
Water melon – ¼ cup (cut bite size, seeds removed)


Salt – 1 pinch
Honey – 1 tspn
Dry ginger powder - 1 pinch

Method

Boil the white channa (chick peas) 
Cook them well so that you can mash them.
Add melons and sprinkle the salt ,honey, dry ginger powder.
Mix well and serve to your baby.
Eye catching colourful  salad will attract the babies to eat.
