Raw mango Chutney - Pacha Manga Chutney



Kerala Special Manga Chutney/Raw Mango Chutney/Pacha Manga Chutney





Ingredients



  1. Raw Manga – 1
  2. Fresh coconut – ¼ cup
  3. Whole red chilli – 3 ( depends on  your spice level)
  4. Small onion – 3
  5. Salt – to taste
  6. Ginger – small piece
  7. Garlic – 1 pod

For tempering


  1. Mustard seeds – ¼ tspn
  2. Oil – ½ tspn
  3. Curry leaves – few
  4. Urad Dal - 1/2 tspn




Method


  1. Wash remove the skin from the raw mango and cut into small pieces.
  2. In a mixie add raw mango, coconut, ginger, garlic, salt, small onion grind into coarse paste.
  3. In a small pan temper with above ingredients and pour it to mango paste and mix well.
  4. We can have this chutney with plain rice or dosa.
  5. This chutney gives more taste especially to the pregnant women.


Serves : 3 person

Preparation time: 7 minutes

Flax seed beet Fish Cutlet

Flax seed beetroot Fish Cutlet





Beetroot is a Cancer Cure Veggie and it's cures constipation problem, intake of beetroot it will increase your hemoglobin level. very good for pregnant ladies, it is also cure problems like itching and kidney stone.Normally all are using boiled potato instead we can add beetroot and carrot , it taste very different 

  1. Flaxseeds (also called linseeds) are a rich source of micronutrients, dietary fiber, manganese, vitamin B1, and the essential fatty acid alpha-linolenic acid, also known as ALA or omega-3. The seeds come fromflax, one of the oldest fiber crops in the world - known to have been cultivated in ancient Egypt and China.

Ingredients

Marinate and cook
Bone less fish ( King Fish) – ½ cup
ginger Garlic paste – ½ tspn
salt – ¼ tspn
pepper pwd – ¼ tspn


 (Mix all the below ingredients with cooked fish)

grated beetroot – 2 nos
boiled potato – 1 no (big) 150 gram
boiled carrot – 2 inch size
chopped onion – 1 nos
chopped green chilli – 1 nos
garam masala wd – ½ tspn
pepper pwd – ½ tspn
coriander leaves – handfull of
bread crumps – 1 tbspn
flax seed powder – ¼ cup

for  coating
crumps pwd – requieed qty ( ¾ cup)
corn flour pwd – 1 tbspn

for dipping
egg – 1 no

Method

  1. Clean and wash the fish , add pepper pwd, gg paste, and salt mix well and for 10 minutes.
  2. cook it well and keep it aside .
  3. In a bowl add , cooked fish, grated beetroot, boiled potato, boiled carrot mash and mix well .
  4.  Add chopped onions, green chillis, salt, pepper pwd, garam masala pwd, bread crumps, flax seed pwd mix well and make equal size, playable ball.
  5. In a bowl beat the egg until it turns in to fluffy texture.
  6. In a plate mix corn flour and bread crumps. 
  7. Now dip the prepared cutlet balls, dip it in the beaten egg and coat well with bread cramps and corn flour mix, press it lightly and arrange  it  in a plate.
     
  8. Keep it in the fridge for 1 hour and In a tawa add oil  and shallow fry all the cutlets.
  9. Healthy Flax seed Beet Cutlet is now ready to serve with mint chutney or ketchup.


Note: (We can store this in a freezer, and when required, defrost it and fry either deep fry or shallow fry.)
Instead of Beetroot you can add any vegetables of your choice.

Chicken Lolipop Kabsa



How to Prepare Easy Arabic  Kabsa Rice.

Kabsa rice is a Traditional Recipe mostly seen in Arab Countries. The Specialty of this  recipe is that it is cooked with Mutton  or Whole Chicken stock.

Serves: 4 
Preparation Time - 25 Miin
Cooking Time - 30 Min


Chicken Kabsa


Chicken Lolipop – 8 pcs
Rice – 500 gram
Oil – 50 ml
Cinnamon – 1 inch size
Green cardamom – 3
Clove – 3
Dry lemon – 1
Onion – 3 nos
Tomato – 3 nos small
Ginger garlic paste – 1 ½ tbspn
Butter – 1 tspn
Salt – taste


Method

Wash and  Soak Rice for 20 minutes
Wash and clean the chicken lollipop


In a cooker pour 4 cups of water and add chicken with little salt and leave 3 whistle
After pressure release separate the chicken stock and chicken lollipops  and set aside.






In a rice cooker , heat the oil + butter add dry lemon ,cinnamon, clove, Green cardamom when  they start crackling add chopped onion, and tomato stir it occasionally  without making it burn.

Now add the chicken stock which we stored before 1 : ½  ratio , when it starts boiling and soaked rice and  salt cook it as per the rice cooker instruction.




Now in the cooked chicken u can add some masala like little pepper or red chilli powder , salt,corn floor powder, bread cramps and  mix it well and marinate about 5 minutes.
You can Either deep fry or grill it.




Serving method : In a big bowl spread the cooked kabsa rice , arrange the grilled chicken over it. U can also provide other side dishes for the kabsa rice like tomato salsa and lettuce salad.

Simple and easy Arabic Traditional kabsa rice.



Normally Arabs use in this recipe whole baby chicken, but as per my taste i use lollipop chicken which would be more preferable to small kids.

Eid Special Mitta Khana




Eid-al-Adha 2014 is also called as the ‘Greater Eid’ and is the second momentous festival of the Muslims. This festival comes immediately after Eid-ul-Fitr and every Muslim is required to fast for 6 days in the month of Shawwal. After this, they have to prepare for their trip to Hajj.On the tenth day of Hajj, they celebrate the festival of sacrifice. Eid-Al-Adha is celebrated in a similar way as Eid-Ul-Fitr, the only difference is that an animal is sacrificed on this day.

 Mitta Khana is the Traditional sweet in Muslim Marriages , other occasions & Eid Festivals.

Ingredients


  1. basmati rice - 1/4 kg
  2. sugar - 1/2 kg
  3. sweetless kowa - 50 gram
  4. dalda - 50 gram
  5. cashew - 50gram
  6. raisins - 50 gram
  7. cinnamon - 1 small piece
  8. clove - 2 nos
  9. yellow or red food colouring - i pinch
  10. gheen - 2 tspn
  11. salt - 1 pinch


Method


  1. Wash and soak rice for 20 minutes and drain the water completely.
  2. in a wide vessel add 3/4th water and bring to boil , when it starts boiling  add pinch of salt ,yellow food colouring and add the  rice to the boiling water. And cook it for 3/4 and drain it in colander.
  3. in a other pan heat dalda and add Clove & cinnamon ,add cooked rice and toss well then add sugar and cook for 5 minutes 
  4. Now add the  kowa and stir well, cook until sugar melts and absorbs the rice.
  5. In a separate pan heat ghee and fry the nuts and raisins till golden brown, add it to the rice and mix well and serve
  6. It's very well goes with Mutton biriyani, and all biriyani varieties.

Instead of Dalda you can use ghee or butter.
