Ingredients
Rajma Beetroot hummus
beetroot 1 cup small
white sesame seeds - 3 tablespoon
garlic - 3 pod
rajma - 1 cup small
salt
lemon
olive oil
vinegar
white pepper

Method

powder the sesame seeds , add olive oil and litter water grind, add garlic and white pepper grind well and add rajma and beetroot grind it and remove from the mixie.finelly add little red chili or black peper mix well
and transfer to a serving plate and garninsh with white sesame seeds and olive oil.

  3. 1 Grapefruit
  4. 1 orange
  5. 1 Indian orange (saththukudi)
  6. 200 ml water
  7. 5 pcs ice cubes
  8. 1 tbsp ginger honey or brown sugar

Method

Wash cut and remove seeds from three oranges 
in a blender/juicer add water,brown sugar and ice cubes blend well and strain it. 
for Sweetner add ginger honey or brown sugar.

Backed Pumpkin Cauliflower and Beans Tikka Roll


Ingredients


100 Gram yellow pumpkin
50 gram cauliflower
25 gram beans
1/2 Tspn Lemon Juice
1 Tbspn Shan Tikka Masala
1/2 Tsp Kashmiri Red Chilli Powder
1/2 Tspn Garlic Powder
1 tspn oil / butter
4 wheat flour paratha
4 Tspn Bbq Sauce
4 Tspn Tomato Ketchup
3 tbsp coriander leaves
2 tbsp Thinly Sliced onion
2 tbsp thinly sliced tomato
Method
Wash And Cut The pumpkin to squre shape,clean the cauliflower florets and beans
cut the beans into one inch size.
In a pyrex bowl add pumpkin, cauliflower and beans Apply All The Masala mix it well,lemon juice And add oil/butter Marinate 10
Preheat oven to 180 degree, 20 minutes keep the bowl safely,Grill the vegetables to 30 minutes, first bake 15 minutes,after 15 minutes,safely remove the veggie bowl out side and shake it well add Now arranging roll in a plate place the wheat paratha,Spread,BBQ Sauce,
Place The baked Pumpkin Cauliflower and beans Tikka Sprinkle Ketchup And roll itlitter butter,again back to the oven baked it another 15 minutes.
Now Baked Pumpkin Tika Wheat Paratha Roll Is Ready. Repeat the same rest of Wheat parathas.

Soft Wheat chapati with Ragi

Recently I participated in Foodshala Season - 8 
chapati also one of the recipe on that, Chef's appreciated this soft chapati.



Chapati is common food for diet people , adding  ragi flour and rainbow milk or milk with ragi is we can get healthy and very soft chapati.


Ingredients

Soft Wheat chappathi
Ingredients
wheat flour - 1 cup
ghee or oil  - 1/2 tspn
hot water - 1/4 cup
Ragi Flour - 1 tbspn
rainbow milk or milk - 2 tbspn
salt - to taste
sugar - 1/2 tspn



Method

In a bowl add wheat flour, ragi powder ,sugar, salt, melted ghee rainbow milk  mix it well and add hot water and mix with fork and leave 2 minutes, Now apply oil and your palm and make a smooth dough. And close the lid and rest for 10 minutes.
now divide dough into equal size balls , dust the flour and prepare thin chappthis with rolling pin.
Heat a tawa (pan) and put the prepared thick chapati and cook for  2 minutes flip over and cook for another 2 minutes.

Pretty pink beet Hamuus
1.     Chopped and boiled   Beetroot – 1/4 cup
2.    paprika powder  – ½ tspn
3.    Boiled chick peas – 100 gram
4.    Lemen juice – two tspn
5.    Roasted white sesame seeds – one  tbspn + one tspn
6.    Garlic pod -  2 nos
7.    Salt to taste
8.    Oilve oil – 1 tspn for

For garnishing

1.     Olive oil – 1 tbspn
2.    Chopped and  Boiled beetrood – 1 tspn
3.    Thyme leave - few


Method
1.     In a mixie , powder the white sesame seeds and add chickpeas ,cooked beetroot, garlic and salt, olive oil  grind to a smooth paste.
2.    Transfer this ground  hamuus into a serving bowl and spread  lemon juice, paprika, sesame seeds and mix it well.
3.    Garnish with cooked beetroot and thyme leaves.
4.    while serving drizzle some olive oil.
5.    Serve with grilled chicken or mutton or kabab and kuboos.

This Hammus goes well with kuboos, rotti, naan and all grilled chicken or mutton . Very good spread for sandwich, shawarma and falafel sandwich

Bakrid Special Goat Leg Biriyani






 Mutton raan is whole leg ,cooking large pieces , we can prepare gravy or biriyani.
This is long hours cooking process.

for Goat leg marination

curd 3 tbps/100 gram
salt. -2 tspn
white vinegar  - 1 tspn
soy sauce  - 1 tspn
lemon juice - 1 no
green chilli 3nos
raw papaya paste _two tspn
red chilli powder - 1 tspn
black pepper pwd-1 tspn
red colour powder-little
ginger - two inch size
garlic - 8 pod
butter - 2 tbspn
oilve oil-1/4 cup
1/2tspn cardamom pwd
1/2 tspn cinnamon powder
for leg tempering
butter + oil
onion - 2 nos



For Biriyani

long basmati rice - 400 gram
oil + butter or ghee
bay leaves
cardamom
cinnamon stick
clove
onion
tomato - 2 nos
ginger garlic paste - 2 tsbspn
biriyani masala - 2 tpn
sliced potato

Mothod

wash whole-leg mutton and drain water completely.
add all the masalas in a mixer grinder grind well and add it whole-leg and marinate over night or 6 to 8 hours.
now first leg tempering in a heavy wide vessel add butten + oil , add chopped onion saute till onion trasulant , now place the marinated whole-leg and cook both side 20 minutes
(mutton whole leg will cooking time more depends on your country mutton)
now remove the whole leg and grill it or roast in pan.before placing leg for grill arrange sliced potatos and grill it each side 20 minutes.
now biriyani preparation

in a biriyani vessel add ghee + oil add bay leaves, cinnamon,clove cardamom when it splutter and onion saute till golden brown,add ginger garlic paste saute well , add coriender and mint leaves add chopped tomatos cook well.
add spice powders red chilli powder,turmeric powder and biriyani masala and salt mix well and cook for 2 minutes and add it leg roast gravy. ( water mesurement all gravies 1: 1/2 ) add 1/2 glass more boil the gravy add soaked rice and cook for 10 minutes and make a dhum for 20 minutes in a low flame.
