Ramalan Special Nonbu Kanji /Ifthar Soup

This porridge (kanji) is prepared everyday during the Ramadan season. 

 In the Islamic Tradition, during Ramadan's 30 days,  we  prepare many variety of kanji.. There are varieties of rice soup like (coconut milk rice soup, veg rice soup, oats veg chicken soup,mutton keema rice soup, chicken kheema rice soup,biriyani noobu kanji , tomato soup, cream of chicken soup,palak soup, etc....) among which one of them

 It is eaten with urad dal vadai, masala vadai, pakoda, bhajji, cutlet  or any other fried and crispy snacks.

Ramdan Nonbu kanji - May - 2019

for kanji

broken rice - 2 cup (400 gram)
yellow moong dal - 50 gram
bengal gram (kadalaiparuppu) - 2 tbspn
carrot chopped - 1/2 no
onion chopped - 1/2 no
tomato - 1 no
garlic - 6 pod

for kheema masala

mutton kheema - 1/4 kg
oil + ghee - 4 tspn
cinamon - 1 piece
chopped onion - 2 nos
gg paste - 3 tspn
coriander leves - few
mint leaves - few
green chilli - 2 nos
curd - 2 tbspn
red chilli powder - 1 tspn
termeric - 1/2 tspn
coconut milk -2 cup

wash and soak broken rice  , moong dal and bengal gram for 1/2 hour
in a wide vessel boil 10 glasses of water (1000 lr) , add soaked rice and dals. Add chopped onion, chopped carrot,chopped garlic and few mint, coriander leaves , let it cook for 1/2 hour ,often stir it every 5 minutes to avoid burning.
wash kheema and strain water completely
 In a vessel,  heat oil and temper the cinnamon, clove, cardamom.
Add chopped onions and carrot  stir for 2 min and close the lid and keep the flame low, leave for 5 min.
Add ginger garlic paste.   stir well and  keep in low flame. After the raw smell goes, add chopped coriander leaves and mint leaves and stir it for 1 min.
Add tomato and green chili,kheema  then add red chili powder, turmeric powder, salt and curd.  stir well.
Cook on low flame for 15 min.
now add this kheema mixture into a cooked broken rice and stir it well and add coconut milk cook another 5 minitues . Transfer kanjsi to serving  bowl and vada and eat this in a ifthar time . This  Rice kheema Soup is very good filling and helathy for Ifthar.

Note :this rice can serve 10 to 16 persons

Biscoff Biscuit Cheese cake 
For base
Lotus biscoff - 10 nos
oats - 1 tbspn
lurpak batter - 3 tbspn
walnut or pistacho - needed qty

For filling
cream cheese - 200 gram
fresh cream - 100 gram
biscoff biscuit - 3 nos
Strawberry - 1 no
pomegranate - 1 tsbn
sugar - 3 tbspn
sweetened  condensed milk -  40 ml

For glace
pomegranate & strawberry  juice - 50 ml
strawberry essence - one drop
agar agar - 3 gram 
sugar - 3 tspn
rooh afza essence - 10 ml

for garnishing
biscoff biscuit
Powder the Biscoff biscuits in a food processor & oats and pistachio, melt the butter and mix it with the biscuit & oats powder. Divide for portion and evenly set this mixture into  4 bowl and press tightly and set it in refrigerator for 1/2 hour .
 In a pan add  soaked china grass with one glass of water and boil  and let it cool.
  In a wide bowl add  cream cheese, fresh cream and Strawberry and pomegranate , china grass, sugar or condensed milk  and blend well . 
 Take 4 wide mini falooda bowl set this batter mix into each bowl press tightly and set refrigerate it  for  1/2 hours.

In a pan add Soak china grass  and boil with ½ cup of water , add strawberry essence, rooh afsha pomegranate and strawberry juice  sugar, rooh afsha and boil it for  5 minutes.

cool it in room temperature  for 3 minutes and  spread this  glaze  over the 4 bowl which we set in a fridge . allow the cheese cake to set for half an hour or  an hour.

Semiya pongal

For one year baby food

Semiya pongal

roasted Semiya - 3/4 cup
roasted yellow moong dal - 1/4 cup
ghee - 2 tspn
nutmeg powder - pinch
cardamom powder - 1/4 tspn
sugar - 1/4 cup / brown sugar
chopped cashew nuts - few

In a cooker add roasted yellow moong dal add 1 cup of water and close the cooker lid and cook the moong dhall, after pressure releases add roasted semiyaa and cook for 5 to 10 minutes.
 Now add milk ,sugar, nutmeg powder,cardamom powder  and cook well.
Finally roast the cashew nuts in ghee and pour it in  semiya pongal and mix  it well. Semiya pongal is ready you can serve it   with methu vada (urad dal vadai).

Laban (butter milk)   400 ml – 2 pkt ( or ) curd 200 ml
In 1 tsp oil roast and grind
Cumin seeds – 1 tspn
Green chilly –2 nos
Grated coconut – 1 tbsp
Channa dhall – (kadalai paruppu) – 1 tsp
Rice – 1 tspn
Methi seeds – 5 nos
For tempering:
Oil – 1 tspn
Cumin seeds – 1 tspn
Mustard seeds – 1 tspn
Garlic – 2 nos (chopped)
Curry leaves – few nos
Asofoetida - little
Soak the rice and channa dhall for 20 mins., wash and cut ladies finger into one inch sizes and fry it in a oil and keep aside
Fry above said ingredients in one tspn oil and leave it to cool and grind as a    smooth paste.         
With that paste add one glass of water and boil it in low flame for 5 mins.
Add laban (moor) and curd mix and fried ladies fingers.
Finally temper the above said ingredients and add to kuzhambu.
Serve with white steamed rice and ladies finger dhall poriyal or beetroot poriyal.

If you use curd add 2 cups of water and make the butter milk.

Fire less cooking

Goji berries are very rich in Iron, Strengthens Bone and improve eyesight.
Dates has iron and other nutrients, which give lot of energy to the body.


  • Ripe date - 3 nos big size
  • white seasame seeds - 2 tbspn
  • Roasted peanut - 2 tbspn
  • sunflower seed - 1 tbspn
  • Goji berries - 2 tspn
  • dry coconut - 3 tbspn

Remove the seed from dates, crush the peanuts, and add ingredients in a plate mix it well and prepare small balls.Very healthy bar .  When we are hungry we can eat this ball and very useful when travelling.

Kunafa is  one of the  Arabic Traditional recipe and street food too, in Ramadan it is prepared in more quantity  and sell in road side .
kunafa  Dough is  available on all supermarkets in  frozen section, if you don''t get this kunafa vermicelli ,  don''t worry we can prepare it with our  sheer kurma vermicelli  roll type or thin type  and we can prepare with  bread  too ,it taste the same,.

Arabic Bread Kunefah/Kunafa - 1

Bread - 4 Slices
Butter - 3 tbspn
Chopped Pisthachio - 50 gram
Fresh Cream - 1/2 tin
Nestle Cream - 1/2 tin
Almarai Cheese cubes - 3 nos
Sugar syrub - required qty
Saffron - 4 to 5 Strands
Lemon juice 1/2 tpn

In a food processor powder the bread slices.Melt the butter and add it to bread powder divide it into two portions.  In a mould ( any shape of your choice ) i took rectangle cake tin ,spread   half of the bread powder evenly on the mould.(First layer)reserve balance  keep it aside.Take another   bowl add nestle cream , cheese, fresh cream mix it well and add pisthacho flakes and walnut flakes.mix  it pour this cheese mix over the bread powder. (second layer)For  the third layer spread the reserved bread with butter mixer over the cheese.

 preheat the oven at  180 degree for  20 minutes select  center option bake for  20 minutes .yummy kunafa is ready ,Transfer it  into a serving plate, you can cut  to desired  shapes i have  cut this to heart shape.

proceces for sugar syrup: one cup sugar and one cup water bring to boil and add rose water, lemon juice  and saffron mix it  well.

while serving in a bowl place the kunafa and put holes with fork and pour the sugar syrup into it
amazing delicious  Arabic dessert is ready to serve.

( here i didn''t prepare sugar syrup i have left over gulab jamoon sugar syrup  so i just  added lemon juice and saffron poured over the kunafa).

Arabic Vermicelli Kunafa in Indian Twist - 2

Indian Sheer kurma Vermicelli - one bunch (50 gram)
Fresh Cream - 1/4 tin
Nestle Cream - 1/4 tin
Almarai Cheese cubes - 1 to 2  nos
Pistacho - needed qty
Sugar syrup - required qty
Saffron - 2 strands
Lemon juice - 1/4 tspn

Semiya (vermicelli kunafa)
We can preapare this kunafa with sheer kurma semiya( thin vermicelli) too.
 At first crush the vermicelli and add melted butter  to it, divide  it into two portions  .

For  the first layer, take one portion and spread it on a small cake mould and
for second layer , in a bowl add nestle cream , cheese, fresh cream mix it well and add pisthacho flakes or  walnut flakes.mix  it pour this cheese mix over the vermicelli .

For  the third layer spread the reserved butter mix vermicelli on it.

Preheat the oven at  180 degree for  20 minutes select  center option bake for  20 minutes .
