Sogo Almond and Mixed Nuts Phirni


Phirni is healthy sweet recipe and easy to prepare for all ocasions. 

Phirni is an Islamic Traditional Sweet recipe which is served with naan, idiyappam,bun,dosai etc..





Key Iron  Ingredients : Almond & nuts
Preparation time: 20 minutes
cooking time : 15 minutes
serves - 6
Sogo Mixed Nuts Phirni







Ingredients

600 ml milk
100 gram sugar
200 ml Sweetened condensed milk
25 gram soji

4 green cardamom

to grind
25 gram Almond
25 gram pistachio
25 gram walnut

50 gram sogo


 tempering
Ghee - 1 tbspn
50 gram cashew nuts 
10 gram raisins





Method

Roast sogo in a ghee and add 3 cup of water and 4 cardamom cook well add milk and cook reduce litter.
Soak all the nuts (Almond,cashew, walnut and pistachio Grind to a smooth paste  and add it to milk, after boiling add soji little by little stir it well without any lumps.
Cook for 5 minutes  add sweetened condensed milk ( milk maid) and sugar mix well.
Finally chop the cashew nuts  roast  in a ghee and add it to phirni.
Serve with Dosa or idiyappam.

Restaurant Style Minty Chicken Tikka



Chicken Tikka is world wide delicious party , starter food and all occasions. here i am easily prepared in Electric grill Perfect party Dish with Electric Grill Boneless Minty Chicken Tikka. Minty Flavour gives very good taste to this tikka.



Key Iron Ingredients : Chicken,Mint
Preparation time: 10 mintes
cooking time: 25 minutes
serves: 3






Ingredients

1st marination :
 Boneless chicken - 1/2 kg
ginger garlic paste - 1 tbspn
 salt - 1/2 tspn
for 2nd marination:
coarsely ground whole black pepper - 1tbspn
salt - 1/4 tspn
Green chilli - 1tspn
Mint  paste - 3 tbspbn
thick curd (hung curd) (yogurt)- 200 gram,
 oil + butter - 2 tbspn
to sprinkle and garnish: Lettuce leaves, Coriander leaves and mint leaves, grated carrot lemon juice chat masala butter
How to make Boneless Minty Chicken Tikka


  1. Wash the chicken and drain the water well. Cut into cubes. Add salt, ginger garlic paste and marinate for 30 minutes. To the curd, add coarsely ground pepper , green chilli paste, mint paste,salt ,oil and mix well with a fork. Once again,

  1. Soak skewers in a water for 10 minutes. Arrange the marinated chicken cubes in a Skewers with little gap. Grill both sides on electric grill. Each side 10 to 15 minutes.
  2. Arrange them on a serving plate. Sprinkle the chat masala, lemon juice and melted butter over the tikkas Garnishing with Grated Carrot, mint and coriander leaves.
My Tip:
Alternatively, you can roast on a Tawa in low flame. Preparation time 10 + Marinating time

Mutton Cutlet with Pomegranate
Mutton Cutlet is very good  evening time snacks, and street food.
We can prepare fish cutlet, veg cutlet , prawn cutlet is perfect to serve at any occasion. It is a quick and easy recipe an you can easily prepare at home for our side dish,party.    






  Key Iron Ingredients : Mutton kheema , Pomegranate
Preparation time : 20 minutes (one hour fridge timing)
cooking time : 20 minutes
serves : 4

Ingredients
cook kheema separately
mutton kheema - 150 gram
ginger Garlic paste – ½ tspn
salt – 1/2 tspn
pepper pwd – ¼ tspn
chili powder – ½ tspn

(Mix all the below ingredients with cooked mutton kheema)

boiled potato – 1 no (big) 150 gram
boiled carrot – 2 inch size
chopped onion – 1 nos
chopped green chilli – 1 nos
garam masala wd – ½ tspn
pepper pwd – ½ tspn
coardely ground coriander
pomegranate – 1 tbspn
coriander leaves – handfull of
bread crumps – 1 tbspn
salt – to taste

for coating
crumps pwd – requieed qty ( ¾ cup)
corn flour pwd – 1 tbspn

       for dipping
       egg white only – 2 nos









Method
  1.  Clean and wash the kheema drain the water completely , add pepper pwd, chilli powder, gg paste, and salt mix well and for 10 minutes.cook it well and keep it aside
  2.  In a bowl add , cooked kheema, , boiled potato, boiled carrot mash and mix well
  3. Add chopped onions, green chillis, salt, pepper pwd, garam masala pwd, pomegranate,bread crumps, mix well and make equal size, playable ball.
  4. In a bowl beat the egg until it turns in to fluffy texture. 5. In a plate mix corn flour and bread crumps.
  5.  Now dip the prepared cutlet balls, dip it in the beaten egg and coat well with bread cramps and corn flour mix, press it lightly and arrange it in a plate
         Keep it in the fridge for 1 hour (or fry immediately) and In a tawa add oil and shallow fry all the cutlets.          Cutlet is now ready to serve with mint chutney or ketchup

My Tip:
Note: (We can store this in a freezer, and when required, defrost it and fry either deep fry or shallow fry.)

Boiled Quail Egg Fry



Key Iron Ingredients: Quail Egg
Preparation Time: 5 minutes
cooking time  14 minutes
Type of Dish: Breakfast, Snacks 
serves : 3 or 4
Quail eggs are a rich source of iron.
Boiled Quail Egg Fry 

Ingredients:

eggs – 12 nos

for masala:

red chilli powder – ½  tspn
coarsely ground black pepper powder – ½  tspn
coarsely ground cumin powder – ½ tspn
salt -  (to taste) ¾  tspn 

oil - for frying
butter (or) ghee (or) gingelly oil  - 1/2 tspn





Method

Place eggs in a pot and add 1/2  tspn. salt.  Pour water to  3/4 of  the pot  and boil them for 10 minutes.  Transfer the eggs into cold water.  Remove the eggshells carefully. 
Heat a non stick pan.   Add oil + butter.   Add all chilli powder,pepper powder, cumin powder and salt saute ½ minute immediately add the quail eggs and fry over low heat,   until they become golden brown.  (about 2 to 3 minutes on each side) 

Note:  while frying the eggs, close the pan with the lid, as it may burst up.  You can also make a bread sandwich with these fried eggs.   For a different variation, to serve it as a snack for the kids.Best paleo breakfast.Rich Iron Recipe.

Dates and mixed nuts ball
Dates has iron and other nutrients, which give lot of energy to the body.
To maintain normal and good health, body needs iron content. 

Preparation time : 10 minutes
cooking time 10 minutes
serves :8
Iron Ingredients: Almond, Dates
Ingredients

Dated – 10 nos
Chopped Mixed nuts – almond flakes, pistachio flakes , cashew, walnut – 100 gram 
Coconut flakes – required qty (for rolling)
Roasted sesame seeds – required qty (for rolling)
Ghee – 1 tspn


Method
Remove seeds from dates , roast the nuts with ghee
In a bowl add dates and  nuts make gooseberry size (amla) small ball
Roll it with sesame seeds and coconut flakes 
Easy and healthy rich iron nutritious dates and nuts ball.

Mix Millet Mini Green Adai/Pancake



Home made powder pack healthy mini mix millet green pancake/adai 
Iron Ingredients : Curry leaves and palak, Lentil
Preparation Time: 15 minutes + soaking time 1 hour
cooking time: 20 minutes
serves 3
Ingredients

1.     Bengal gram /Lentil (kadala paruppu) – ½ cup
2.     Barnyard millet – ¼ cup
3.     Saamai – ¼ cup
4.     Thinai – ¼ cup
5.     green chilli – 1 nos
6.     ginger – small piece
7.     curry leaves – ½ bunch
8.     palak - ½ bunch
9.     Salt – to taste
10. Curry leaves – few
11. Gingelly oil & ghee – required qty
How to make Mix Millet Mini green Adai/Pancake


  1. Wash and Soak millets separate ,channa dal separate for one hour. Clean , wash and chop spinach and curry leaves.
  2. In a mixie first add channa dal grind it in a coarse paste. Remove from the mixie
  3. add chopped curry leaves , spinach , ginger, green chilli , salt and millets add little water and grind well and add ground channa dal and mix well
  4. Heat mini pancake pan spread gingelly oil plus ghee pour the batter and cook and flip it and spread the oil again prepare crispy adai.

Chapli Kabab




Iron - Mutton,coriender 
Preparation Time: 15 minutes plus Marinating time
Cooking Time : 20 minutes
Chapli Kabab is the Pakistanis famous Street food recipe.


  1. kheema – ¼ kg Goat- Mutton or Beef
  2. Chopped onion – 2 tbaspn
  3. Coarsely  ground coriander seeds – 1 tpsn
  4. Roasted and grinded cumin seeds – 1 tpsn
  5. Whole red chilli flakes – 1 tspn
  6. Ginger garlic paste – 1 tspn
  7. Tomato chopped – 1 tspn
  8. Pomegranate – 1 tbspn
  9. coriender leaves - few
  10. Salt – to taste
  11. Basan flour or corn flour for binding
  12. Required Oil for shallow fry
  13. Tomato roundly sliced – required qty







Method 
Wash and drain the water from kheema add all ingredients ( 1 to 11) expect sliced tomato and oil. Marinate half hour.
Prepare a  big ball and make it flat round shape and keep tomato sliced over the mutton and press it .
Heat oil in  a iron tawa ( or ) Non stick pan drop the flat kabab ‘s and cook both side well. we can eat with naan or thandoori roti.

Burnt Garlic, Dill Leaves & Parsely Soup


Burnt Garlic  Dill Leaves, Parsely fresh coconut milk Soup/ Burned garlic soup

cooking time : 20 min

To maintain normal and good health, body needs iron content food at least little daily. Dill Leaves , Paresly, Coriender leaves,  has iron content, which will help prevent iron deficiency and anemia
Garlic  Dill Leaves, Parsely fresh coconut milk Soup
Ingredients
Garlic – 12 pod
Small onion – 10 nos
Coriander leaves – one tbspn
Dill leaves – one tbpsn
Parsely – one tbspn
Green chilli – one no
Fresh Coconut milk – 2 cup
Butter – 1 tbspn







Method
Burn the garlic directly in the   gas stove and chop it thinly.
Chop small onion and green chilies
Wash and cut all the greens keep aside
Heat the butter add chopped garlic, small onion, green chilli  and all greens sauté for 5 minutes add 3 cup of water and cook 5 to 7 minutes.
Cool and blend in blender , again bring to boil 5 minutes add fresh coconut milk , pepper powder and salt boil 1 minute and remove from the heat Transfer the soup into a serving bowl
