Chicken Pepper Tikka Kabab





Chicken Pepper Tikka Kabab

Ingredients


for 1st marination :
Boneless chicken - 1/2 kg
ginger garlic paste - 1 tbspn
salt - 1/2 tspn

for 2nd marination: 
coarsely ground  whole black pepper - 2 tbspn
salt - 1/4 tspn
green chilli paste - 1 tspn
thick curd  (yogurt)- 200 gram
oil - 1 tbspn


to  sprinkle and garnish: 


lemon juice
chat masala
butter


Method

Wash the chicken and drain the water well. 
Cut into cubes.  Add salt, ginger garlic paste and marinate for 30 minutes.
To the curd, add coarsely ground pepper , green chilli paste, salt ,oil and mix well with a fork.
Once again, marinate for 30 minutes.
Deep fry the chicken pieces in hot oil . 
Alternatively, you can roast on a grill Or barbeque.




Arrange them on a serving plate.  Sprinkle the chat masala, lemon juice and melted butter over the tikkas.  I served here with Mashed Potato Indian Type, Palak Hamuus.

Chicken Pepper Tikkas will be delicious with, rotti, paratta, nan, chapathies or with kuboos.

Tuitti Fruity Pancakes




Tutti Fruity Pancake

You can make Pancakes for breakfast or for parties.  Kids love to eat these colorful pancakes.I am regularly preparing this  different flavours, Coconut milk pancake, Banana pancake,pineapple pancake,pomegranate pancake, raisins pancake etc , .... But  sprinkling tutti fruity very attractive and yummy. Most of my recipes are kids delight only.

Ingredients:

All purpose flour  (Maida) - 200 grams
eggs - 2
salt - 1 pinch
sugar - 100 grams
vanilla   essence - 1 drop
Tutti  frutti - required qty
Oil + Butter - required qty
ghee - required qty


Method

Mix the ingredients (except oil+ butter, ghee and tutti frutti) .   Add water and milk and blend well  in a mixer (blender)  to a  thick batter.  You can also mix well with a fork or a whisk to make a thick batter.  Make sure that there are no lumps.
Heat a non stick pan.   Pour a ladle full of batter and  spread to have  a thick pancake.  Sprinkle the tutti frutti over it.   Cook on low heat.   Add little oil or butter.   Carefully, flip or turn over the pancake and cook the other side on low heat to golden brown.  Make sure that it does not get burned. Instead of Tutti Fruity you can use pomegranate or Black raisins.

Ground Palak dhal/ Toor Dhal Palak Soup/Palak Soup


Ground Palak dhal/Palak Dhal Soup/


 Generally greens like Palak (Spinach) are very healthy for all. Palak has more iron content.  It is especially good for kids, anemic people , pregnant women and elderly  people.





Toor dhal – 100 grams
Turmeric powder – ¼ tspn

For grinding ( to roast and to grind) 

Palak (Spinach) – 1 full bunch
Tomato – 2 ( chopped)
Onion – 2  (chopped)
Red chilli powder – 1 tsp
Salt – to taste

For tempering:

Ghee – 1 tspn
Oil – 1 tsp
Cumin seeds - ½ tspn.




Method


Wash and cook the dhal in a pressure cooker. Let it cool. Keep it aside.
Heat  a  large pan.   Add oil and  cumin seeds. Then add onion, tomato, palak, red chili powder, and salt.
 Stir well.   Add enough  water and  cook for 5 minutes over low heat.
Once onion, tomato, and palak are cooked, Let it cool.
Grind the cooked dhal and palak mixture in a blender (mixer) to a fine paste.
In separate pan, heat the ghee + oil and  cumin seeds. Add the ground paste and let it boil for 5 minutes.
You can serve it to your family,  either as a  soup or mash it with plain rice and serve it as a meal.  

Note:

 you can add 1 tspn coconut powder, and 2 tbspn tamarind pulp and cook it with the palak mixture before you grind.

Palkova/Milk Peda/Dhooth peda







Ingredients

Water - 500 ml
Dry Milk Powder - 10 tspn
Sugar - 3 tspn
Ghee - 1tspn
Milk cream  (brie) - 2 tbspn

For garnishing:
Pista Flakes
Black Raisins
Strawberry



Method

In a heavy bottom pan mix dry milk powder and 500 ml water and boil for half hour over medium heat.
 Keep stirring the milk for every 5 minutes, so that the milk     does not get burned at the bottom of the pan. 
Reduce the milk to about 50ml.
The color of the milk may become off-white.  It will be in thick consistency. 
Then add the milk cream (brie) ,   sugar and  ghee.  Keep stirring the mixture continuously. 
Transfer it into a serving plate.  Cut into desire shapes.  Garnish it with the Strawberry, pista flakes and black raisins.







Note:   You can make the milk cream (brie) at home.  when ever you boil  the milk,  you can remove the thick cream that deposits on the top of the milk and preserve it  in the freezer for later use.(for any rich gravy & Sweet recipe)

Carrot Sambar

Carrot Sambar




For dhal:

Toor dhal + moong dhal - 25 grams
turmeric powder - 1/4 tpsn
small Onion - 4 

for tempering: 

Oil - ghee - 1  1/2 tspn
mustard seeds - 1/2 tspn
curry leaves - 5 leaves
garlic - 2 pods


small onions - 4 ( chopped)
tomato - 1/2  (chopped)
carrot -  cut into 3 inch sizes
salt to taste
sambar powder - 3/4 tspn
tamarind pulp - 1 tbspn

Method

1. Wash and cook the dhal in a pressure cooker, mash well and keep it aside.

2. Heat a vessel.  Temper the above said ingredients one by one.   Add the chopped onion, tomato and carrot.  Stir  for 1 minute.   Cook for 5 minutes on low heat.
Now add sambar powder, salt and  tamarind pulp.  Stir well.   Add enough  water and  cook for 5 minutes on low heat.

3.Finally,  add the mashed dhal and stir well.  Heat on medium heat for 3 minutes. 

The kids will also like this yummy carrot sambar.

Spicy Boiled Egg Fry




 Spicy Boiled Egg Fry 

Ingredients:

eggs - 7 

for masala:

red chilli powder - 1 tspn
black pepper powder - 1 tspn
salt -  (to taste) 3/4 tspn 
ginger garlic paste - 1/2 tspn

oil - for frying
butter (or) ghee (or) dalda (margarine)  - 1/2 tspn

Method

Place eggs in a pot and add 1/2  tspn. salt.  Pour water to  3/4 of  the pot  and boil them for 10 minutes.  Transfer the eggs into cold water.  Remove the eggshells carefully.  Cut each  boiled egg into two halves. 

Mix  the masala mix  with  little water  and make a smooth paste.  Rub it well over the eggs.  Marinate them for 5 minutes.



Heat a non stick pan.   Add oil + butter.   Add the eggs and fry over low heat,  both sides , until they become golden brown.  (about 3 minutes on each side) 



Note:  while frying the eggs, close the pan with the lid, as it may burst up.  

This spicy egg fry is good to serve as a side dish to go with plain rice, lemon rice, or curd rice.  You can also make a bread sandwich with these fried eggs.   For a different variation, to serve it as a snack for the kids, you can add just the black pepper powder and salt to taste and fry it on ghee.

Mashed Vegtable and Fruit with Dhal


      MASHED VEGETABLE AND FRUIT

Serve: 1 Baby
INGREDIENTS:
Potato – ¼ piece of 1
Apple – ¼ piece of 1
Carrot – ¼ piece of 1


cooked Plain dhal - one soup spoon.

METHOD:
Wash and peel of the skin and seed, now steam it well in  well in a pressure cooker.
Add cooked Plain dhal Mash them and mix well  with a clean spoon and feed your baby.
Definitely your baby will enjoy the yummy food.

Plain Toor Dhal / katti paruppu





Plain Dhal /katti paruppu



Ingredients

 toor dhal - 25 grams
turmeric powder - 1/4 tspn
cumin seeds  1/4 tspn
onion - 1
garlic pod - 1



for tempering:
oil + ghee - 1 tspn
whole red chili - 2 nos
mustard seed - 1/4 tspn
curry leaves - 5 leaves
small onion - 1 (chopped)

 Method

 In a Pressure cooker, Wash the dhal and add turmeric powder, onion, and cumin seeds.  Add 75 ml water.  Cook on medium heat.

 Let it cool and mash it well.   Keep it aside.

 In a separate pan, add the above - said tempering ingredients and fry it well.  Add to cooked dhal.

Mash the plain rice well and add this dhal and mix well with the rice.  You can feed your baby regularly with this dhal rice as It is good for baby's health.

 This recipe is from my mother-in-law. She made this dhal rice and gave it to my husband, when he was a 8 month old baby.
