Fried Rice Recipe
How to make perfect Mushroom Fried Rice.

Ingredients
- Rice: 1 ½ cups
- Oil: 3 tsp + 2 tsp (divided)
- Onion: 1 tbsp + 2 tbsp, finely chopped (divided)
- Ginger-Garlic Paste: 1 tsp
- Soy Sauce: 2 tbsp
- Spring Onion: 2 tbsp (30g) white part for frying, green part for garnish
- Capsicum: ½ cup (50g), chopped
- Eggs: 2, beaten
- Salt: To taste
- Pepper: To taste
- Garlic: 3 cloves, minced
- Green Chilies: 2, chopped
- Carrot: ¼ cup (30g), diced
- Mushrooms: ¼ cup (30g), sliced
- Green Peas: ¼ cup (30g)
- Green Beans: ¼ cup (30g), chopped
- Corn: ¼ cup (30g)
- Cabbage: 3 tbsp (45g), shredded
- Chili Flakes: ½ tsp
- Hot Chili Sauce: 1 tbsp
- Tomato Ketchup: 1 tbsp
Method
Prepare the Rice:
- Soak the rice in water for 20 minutes.
- In a rice cooker, heat 3 tsp of oil, and sauté 1 tbsp of finely chopped onion and 1 tsp of ginger-garlic paste until fragrant.
- Add the soaked rice, 2 tbsp soy sauce, salt to taste, 2 tbsp chopped spring onion (white part), and ½ cup (50g) chopped capsicum.
- Add 2 ¼ cups (540ml) of water, and cook until the rice is done. If using a pressure cooker, cook until 2 whistles, then let it sit for 5 minutes to allow the flavors to infuse.
Prepare the Eggs:
- In a separate bowl, beat 2 eggs with a pinch of salt and pepper.
- Heat a pan with 1 tsp of oil, pour the beaten eggs, and scramble them lightly. Ensure not to overcook. Set aside.
Sauté the Vegetables:
- In a large frying pan, heat 2 tsp of oil. Sauté 2 tbsp of finely chopped onion, minced garlic, and chopped green chilies until softened.
- Add ¼ cup each of diced carrot, sliced mushrooms, green peas, chopped green beans, and corn. Also, add 3 tbsp of shredded cabbage.
- Season with ½ tsp chili flakes, 1 tbsp hot chili sauce, and 1 tbsp tomato ketchup. Stir-fry the vegetables until they are tender but still crisp.
Combine and Serve:
- Mix the cooked rice, scrambled eggs, and sautéed vegetables together in the frying pan.
- Stir well to ensure everything is evenly distributed. Adjust seasoning if necessary.
- Garnish with the green part of the spring onions, and serve hot.
