WORLD WIDE FAMOUS BUTTER CHICKEN/Restaurant Creamy Butter Chicken

Silky and Creamy Butter Chicken, also know as Murgh Makani rich curry that is very comforting and flavorful side dish. Vegetarian butter chicken you can prepare with same method with paneer or cauliflower. WORLD WIDE FAMOUS BUTTER CHICKEN. 


Creamy Butter Chicken




For Marination & Fry

  • Chicken: 1 kg (bone-in or boneless)

  • Ginger-Garlic Paste: 2 tsp

  • Kashmiri Red Chili Powder: 1 tbsp

  • Salt: 1 tsp (or to taste)

  • Chicken 65 Masala (optional): 1 tsp

  • Lemon Juice: from 1 medium lemon

  • Butter + Oil: 2 tbsp (1 tbsp each)

  • Kasuri Methi (crushed): 1 tsp


🧈 To Temper & Grind

  • Butter + Oil: 2 tsp (1 tsp each)

  • Cashew Nuts: 10

  • Tomatoes (medium): 5 (about 600 g), chopped

  • Onions: 300 g, sliced

  • Bay Leaf: 1

  • Black Cardamom: 1

  • Cinnamon Stick: 1-inch piece

  • Green Cardamom: 2

  • Cloves: 3

  • Chopped Ginger: 1 tsp

  • Chopped Garlic: 2 tsp

  • Sugar: ½ tsp

  • Salt: ½ tsp

  • Kashmiri Red Chili Powder: 1 tsp



📝  Method

🍗 1. Marinate & Fry the Chicken:

  1. Mix chicken with ginger-garlic paste, Kashmiri chili powder, salt, chicken 65 masala (if using), lemon juice, and kasuri methi.

  2. Let it marinate for 30 minutes to 2 hours.

  3. Heat 2 tbsp butter + oil in a pan.

  4. Fry the marinated chicken on medium heat until fully cooked and lightly browned. Remove and set aside.


🍅 2. Prepare Gravy Base:

  1. In the same pan, add 2 tsp butter + oil.

  2. Add bay leaf, black cardamom, cinnamon, green cardamom, cloves. Sauté for a few seconds.

  3. Add sliced onions. Sauté until golden.

  4. Add chopped ginger, garlic. Cook till the raw smell goes.

  5. Add tomatoes and cashews. Cook for 10–12 minutes until tomatoes are soft.

  6. Add sugar, ½ tsp salt, and 1 tsp Kashmiri chili powder.

  7. Cool the mixture, remove whole spices if you prefer, and blend into a smooth paste.


🍛 3. Combine & Finish:

  1. Sieve the ground paste and return it to the pan.

  2. Cook on low heat for 5–7 minutes until thick and shiny.

  3. Add the fried chicken and mix well.

  4. Simmer for another 5 minutes. Add a splash of water to adjust the consistency if needed.

  5. Finish with a small cube of butter and 1–2 tbsp fresh cream (optional). Sprinkle crushed kasuri methi on top.






🥗 Serve With:

Hot naan, chapati, or fried rice.

Ingredients

  • Rice: 1 ½ cups 
  • Oil: 3 tsp + 2 tsp (divided)
  • Onion: 1 tbsp + 2 tbsp, finely chopped (divided)
  • Ginger-Garlic Paste: 1 tsp 
  • Soy Sauce: 2 tbsp
  • Spring Onion: 2 tbsp (30g) white part for frying, green part for garnish
  • Capsicum: ½ cup (50g), chopped
  • Eggs: 2, beaten
  • Salt: To taste
  • Pepper: To taste
  • Garlic: 3 cloves, minced
  • Green Chilies: 2, chopped
  • Carrot: ¼ cup (30g), diced
  • Mushrooms: ¼ cup (30g), sliced
  • Green Peas: ¼ cup (30g)
  • Green Beans: ¼ cup (30g), chopped
  • Corn: ¼ cup (30g)
  • Cabbage: 3 tbsp (45g), shredded
  • Chili Flakes: ½ tsp
  • Hot Chili Sauce: 1 tbsp 
  • Tomato Ketchup: 1 tbsp 

Method

  1. Prepare the Rice:

    • Soak the rice in water for 20 minutes.
    • In a rice cooker, heat 3 tsp of oil, and sauté 1 tbsp of finely chopped onion and 1 tsp of ginger-garlic paste until fragrant.
    • Add the soaked rice, 2 tbsp soy sauce, salt to taste, 2 tbsp chopped spring onion (white part), and ½ cup (50g) chopped capsicum.
    • Add 2 ¼ cups (540ml) of water, and cook until the rice is done. If using a pressure cooker, cook until 2 whistles, then let it sit for 5 minutes to allow the flavors to infuse.
  2. Prepare the Eggs:

    • In a separate bowl, beat 2 eggs with a pinch of salt and pepper.
    • Heat a pan with 1 tsp of oil, pour the beaten eggs, and scramble them lightly. Ensure not to overcook. Set aside.
  3. Sauté the Vegetables:

    • In a large frying pan, heat 2 tsp of oil. Sauté 2 tbsp of finely chopped onion, minced garlic, and chopped green chilies until softened.
    • Add ¼ cup each of diced carrot, sliced mushrooms, green peas, chopped green beans, and corn. Also, add 3 tbsp of shredded cabbage.
    • Season with ½ tsp chili flakes, 1 tbsp hot chili sauce, and 1 tbsp tomato ketchup. Stir-fry the vegetables until they are tender but still crisp.
  4. Combine and Serve:

    • Mix the cooked rice, scrambled eggs, and sautéed vegetables together in the frying pan.
    • Stir well to ensure everything is evenly distributed. Adjust seasoning if necessary.
    • Garnish with the green part of the spring onions, and serve hot.
