MIXED HEALTHY SALAD - ( black ,white chick peas & groundnut)






INGREDIENTS:
White chick peas(channa) – ¼ cup
Black chickpeas – ¼ cup
Groundnut – ¼ cup
Raw mango – 1 small
Cucumber – half
Carrot – half
Lemon juice – half siced
White pepper powder – ½ spn
Salt – ½ spn
METHOD:
Soak the black and white chickpeas with groundnut over night and boil in the morning.
In that add grated mango, carrot, cucumber, salt, pepper powder, lemon juice, mix it well and keep it in the refrigerator for 10 mins.
Now the healthy salad is ready to eat in morning diet.

Veg Ghee Rice










INGREDIENTS:
Basmati rice - 400gms
Carrot, Beans, peas-1/4 cup
Finely Chopped Onion-1 no
Small Slice Butter or Ghee- 3 tbspns
Bay leaves-2 nos
Cinnamon- 1
Cloves- 2
Cardomon-2 nos
Pepper- 5 nos
Shajeera (caraway seed) -1/4 spn
Cashew nut- 5 nos
Ginger Garlic paste-1 spn                
Small Tomato- half
Coriander leaves- little
Reddish Green Chilly-1 no
Salt- to taste

 METHOD:
Soak the rice for 20 minutes.
In a rice cooker put the ghee and add the bay leaves, cinnamon, cloves, cardamom, pepper, shajeera, cashewnut till all gets to be fried.
Add onion, ginger garlic paste, coriander leaves and sauté well, make sure that not to get brown.
Add finely chopped carrot, beans, peas and sauté for a while.
Now add the rice and stir slowly. For one glass of rice,  one and half glasses of water like that add the measured water in to it and add the half sliced tomato, salt to taste, now on the rice cooker.
Now colorful and nice aromatic veg ghee rice is ready. Mutton kurma, chicken gravy, fish curry, thick dhal, prawn gravy are the very good side dishes. And it can also be very tasty with coriander chutney.

LIVER (GOAT) FRY

I
INGREDIENTS:



LIVER
200 GRAM
GINGR GARLIC PASTE
1 TSPN
CHILLY POWDER
½ TSPN
SALT
TO TASTE
OIL
2 TSPN
SOYA SAUCE
1 TSPN
LEMON JUICE
¼ TSPN
PEPER POWDER
½ TSPN


CORIANDER LEAVES
FEW FOR GARNISHING



METHOD

Rinse and drain  the liver. 
In a pan heat oil
add onion, ginger garlic paste one by one fry for 2 min
now add liver,chilly, salt, stir fry 2 min.
close the lid and allow cook 2 min in low fire,
add, gram masala, pepper,soya sauce, lemon juice, fry continuously  2 min
garnish with coriander leaves

Note: Liver has iron.  It is good for people, who is anemic. It cures mouth ulcers.

Oats, Horse gram kuzipaniyaaram


Ingredients






OATS HORSE GRAM KUZHIPANIYARAM:
Ingredients:
Horse gram - 1/2 cup
Barley - 1/4 cup
Mutter dal (pattaani paruppu) - 1/2 cup
Oats – ¼ cup
Rice - 1/4 cup
Red chilly - 3 no's
Garlic - 3 nos
Asofoetida - 2 pinch
Bicorbonate  (idli soda) - 2 pinch
Onion - 1 no
Curry leaves - few nos
Chopped coriander leaves(cilantro) - 1 tbsn
Salt - to taste 






  Method:

1.Soak horse gram, muttar dal, rice, barley over night. Drain the water and add soaked oats and grind coarsely with red chilly, asofoetida, garlic. (Soak the oats 10 mins before grinding)
2.Add chopped onion, coriander leaves, curry leaves , salt, idli soda in to it and mix well.
3. Heat paniyaram pan put little oil and  pour the batter.
4. Cook on low flame, checking regularly both sides not to burning.
5. Serve with jaggery  or any chutney.

Note

This is one of the variety which i tried, in chettinad sweet and spicy varieties of kuzhipani
yaram
( I like  paruppadai much. but puruppadai absorbs more oil , so I planned to do this  kuzhipaniyaaram, less oil, then crispy )

Rose Milk with Rooh Apsa











Ingredients: 

Milk - 1 litr
rose essence - 10 drop ( or ) Rooh Apsa  essence 
rose water - 4 drop
sabja seed (Isabkal)- 10 gram
badam, pista - 25 gram
ice cubes - 10







Method:


soak sabja seed over night.(after soaking it will look like sogo)

soak the badam , pista into hot water remove the skin and cut lenthwise keep aside.
In heavy bottom vessel put milk  add enough water and boil the milk.

let it cool

add sugar,  soaked sabja seed,rose essence, rose water,badam pista flakes and ice cubes.

Note: it cures mouth ulcer and stomach ulcer problems.
