Cornflakes Cookies with Raisins

Cornflakes cookies

Ingredients

Cornflakes cookies (Biscuits)

Wheat – ½ cup

Oats – ½ cup (powdered)

Butter – 1/3 cup

Baking powder – ½ tspn

Baking soda – ¼ tspn

Brown sugar – ½ cup

Corn flakes – 2 cup crushed

Coco pwd – 100 gram

Egg – 1 no

Pineapple essence – ¾ tspn

Milk –   little

Raisins  black and yellow –2 tspn each

Salt – ½ pinch

Method

In a bowl mix all the items Oats, coco powder wheat flour, baking soda, baking powder, salt.

In a large mixing bowl beat butter and brown sugar medium speed with electric mixer until combined

Add egg, milk and essence beat until fluffy.

Add flour mixer and mix it well.

Stir in raisins and make small ball and coat cornflakes well and drop in to baking tray with spaces and bake preheated oven 200 o C until golden brown for 12 minutes.

Cool completely In a wire racks Store in airtight container.

In original recipe they used 'Ocean Spray Craisins' (dried cranberries)

Damadai - Soji Coconut Milk Cake - 406



This recipe was published in kunkumam thozi monthly magazine June 2015, Ramadan Recipe

Traditional Sweet   recipe

Dumadai is Similar to Basbousa Arabic Sweet  semolina soft cake Soji Cake Prepared with Coconut Milk.


Ingredients

1. Soji – 200 gram
2. Thick Coconut milk – 150 ml
3. Egg – 2 nos Sugar – 150 gram
4. Ghee – 100 gram
5. Salt – ½ pinch

Method

1. Powder the sugar, Roast the rawa(soji) slightly to yellowish brown and beat the eggs into fluffy texture
2. In a bowl mix egg and sugar add soji and coat it well.
3. Then add salt and ghee and mix it well,.
4. Transfer soji mix into microwave safe container of oven container
5. Preheat the oven for 10 minutes and bake for 5 minutes.
6. Leave it to cool for half hour and then cut to desire shapes.
7. Serve with chai or snacks
