Beetroot Salad






Beetroot Salad

Servers : 1

Ingredients

Trimmed 2 “beetroot  - ¼ cup (medium 1 no)
Olive oil
Cumin pwd – ¼ tspn
Red chilly pwd – 1 pinch

For dressing

Lemen juice
Peper
Salt
Oregano & thyme – ½ tspn


Method

Cut the beetroot 2’ in lengthwise thin pcs, Cook the beetroot with pinch salt
In a pan heat olive oil and add cooked beetroot, cumin pwd, chilli pwd toss well
Remove from the heat mix well above given dressing ingredients in a small bowl
Add it to cooked beetroot mix well and let it cool
 refrigerate for ½ hour.

It’s  good for pregnant women who are very anemic during pregnancy period. Regularly taking this beet salad it will increase the hemoglobin level.

Ramja (Red Kidney Bean) with Raw Mango Salad

Kidney beans are known for their high folate, protein and mineral content. Consumption of kidney beans gives you a healthy heart.

//Sometimes for morning breakfast I will eat this salad. Its a great filling and very light food. Eating salad every day giving us many health benefits. Salad helps to prevent from many diseases like heart problem and blood pressure, it helps to reduce our weight, control the cholesterol It also helps in weight gain, It is a high energy low fat snack too//

Ramja (Red Kidney Bean) with Raw Mango Salad


Ingredients
Raw Mango  - Small – 1 no
Cooked (or) Canned Rajma (kidney Bean) – 2 Soup Spoon

Dressing
Lemon Juice, Honey,Pepper, salt – Each ¼ Tspn
Method
Slice the Mango 2” length add rajma
Mix dressing ingredient and add to rajama & mango mix well
Refrigerate for ½ hour.Now healthy salad is ready to eat in morning diet








Its good for weight loss. 
It purifies our blood.
It eases the nausea during pregnancy.
For cancer patients, it is good to have this Salad when they lose their sense of taste   after chemotherapy. 


Good For Brain This pulse offers outstanding benefits for brain. It contains high amount of vitamin K which provides essential nutrition for both brain and nervous system. Kidney beans are also a good source of vitamin B, which is essential for brain cells. It nourishes the brain nerves and cells which prevents age related disease like Alzheimer's.

Mexican Red Bean With Samoon Sandwich


Mexican Red bean Curry with Long Bun sandwich

Rajma Long Bun Sandwich








Serves : 3



Ingredients

Kidney Beans (canned) - 200 gram
Oil – 2 tspn
Chopped Onion – 2 no
Tomato puree – ½ cup
Red chilli powder – 1 tspn
Salt – to taste
Garlic   clove – 3 nos
Thyme & Oregano  – ½ tspn
Cumin pwd – ½ tspn
Cinnamon pwd – ¼ tspn
Chopped Capsicum - 3 tbspn






 Method


Heat oil in a pan add onion, garlic fry for 2 to 3 minutes
Add chilli pwd, salt, cumin and kidney beans stir well and cook for 3 minutes.
Add cinnamon, tomato puree chopped capsicum stir well and cook on medium heat up to bean curry become thick consistency. Finely sprinkle the dry thyme ,oregano and toss well
Place the bean curry into butter fried Long Bun (samoon) and eat like a sandwich.





Sandwich - 1

Butter Fried Long bun - 2
sliced cucumber
Mayonnaise
Red chilli sauce
Prepared Red bean curry - required filling.

Thousand Island Dressing









Note:  You can prepare same ingredients with  eye bean or channa. 
Instead of Mayonnaise and thousand island dressing you can use Garlic sauce or Hamuus

Roasted Garlic Potato Mayo Sandwich


Ingredients

Potato  – 1 no
Olive oil – 1 tspn
Pepper pwd – ¼ tspn
Garlic pwd ¼ tspn
Salt – ¼ tspn
mayonnaise - 1 tspn
Red chilli sauce – 1 tspn
Small bun – 2 no

Method

Peel the potato and cube in small square size.
Heat olive oil in pan add potato and toss for few minutes.
Add pepper pwd, garlic pwd, salt toss and coat well.
Roast the potato till golden brown.
Remove from heat, cut the bun into two and heat the buns.



Spread the mayo and red chilli sauce into buns







place the roasted potato in middle of the bun






Eat like a sandwich.

Makes : 2 to 3
Preparation time: 5 minutes
Cooking time : 7 minutes

Eggless Ragi Chocolate Mug Cake



Ingredients
Ragi Flour (kezvaraku maavu)  - 3 tspn
Maida Flour (plain Flour)   - 3 tspn
Sodium bi carbonate – 1 pinch
Bakiing pwd – ¼ tspn
Curd – 1 tbpsn
Water – 2 tbspn
Oil  - 1 tbspn
Salt – ½ pinch
Dark Chocolate Bar (patchi)– 3 pcs (1” x 1” inch size bar)










Method
Sieve maida, ragi, baking pwd, and sodium bi carbonate 3 times.
Add curd,oil,water  and chocolate essence beat well
Melt the chocolate and add it to cake mix.
Transfer to a microwave oven safe mug and set 3 minutes to bake the mix.
Yummy mug cake is ready to be serve.
It requires less time and can be done quickly and given to children

Palak omelet with brown bread sandwich

Past 20 yrs im packing lunch box for my sons, my hubby n me, , most probably we prefer sandwich and rolls only , I prepare many variety of non -  veg and veg sandwich





Ingredients


brown Bread - 4 slices
butter (or) oilve oil - 4 tspn
tomato ketchup - 2 tspn
Palak pepper omelette  - 2 nos 



Method
Prepare palak pepper omelet ( refer recipe here)
Heat a frying pan spread the butter (or) olive oil into bread and fry till it turns golden brown.Spread little ketchup on it.
Place the omelettes in between the butter fried bread ,
Easy and healthy sandwich is ready to eat.
It is suitable for breakfast , evening tiffin or night dinner




Palak Omelette

Egg – 2 Nos

Pepper pwd – ½ tspn

Chopped onion – 1 tbspn

Chilli pwd – ½ tspn

Salt – ½ tspn

Chopped palak – 3 tbspn

Ginger garlic paste – ¼ tspn

Method

Beat the egg, add onion, pepper, salt, chilli pwd, gg paste to it.

Now add chopped palak and mix well

Heat some oil in a  tawa (pan) Pour the egg mixture like an omelette and cook both sides.

Spicy Green Garden Soup



Spicy Green Garden Soup



Soups are very healthy for all and very perfect and goes well in this cool winter.



Generally greens are very healthy for all age groups and it has more iron content.  It is especially good for kids, anemic people, pregnant women and elderly people.






Ingredients


Ingredients
Parsley – ¼ cup
Palak (Spinach) – ½ cup
Dill leaves – ½ cup
Coriander leaves – 1 tbspn
Mint – 5 leaves (optional)
Curry Leaves – 5 leaves (optional)
Oregano – ½ tspn
Dry Basil – ½ tspn
White – pepper – ½ tspn
Black pepper – ½ + ½ tbspn
Potato medium – 1 no
Sugar – ½ tspn
Olive oil – 1 tbpn
Spring Onion – 3 sticks (chopped)
Garlic – 3 nos (chopped)
Knor soup cube (vegetable or Chicken) – 1 no









Method

Wash parsley, Palak,leeks,coriander,mint,curry leaves  
In a cooker add all washed greens and oregano, basil, white pepper, black pepper, little salt, soup cube, water and leave 3 to 4 whistles.
Let it cool and blend the mixture
In separate wok add olive oil fry garlic and onion add the blended soup... let it cook for 5 to 7 minutes
Finely add required salt and pepper








Soups are very good for health.  Soups are great to have especially during winter season. Adding pepper to the soup helps to heal throat ulcers.
Soups are good for pregnant women too.
